Salty Sweet Pecan Delight Bites, somebody say glory! I am am sure these will be served in heaven.

Growing up in Georgia, pecans were a staple year round. My best friend Jenny lived across the street from a pecan grove with a quaint pecan shop called Swint’s. They made all sorts of delicious pecan recipes to include divinity. Jenny and I would march across the street twirling our batons for a piece of that pure sugar pecan dream.

Jenny recently reminded me of another treasure from that shop when she surprised my husband and I with a Swint’s goodie box. It included Jenny’s favorite, a white chocolate covered pecan bark they call sweet dreams. The bag ingredients simply read, fried pecans and white chocolate. Talking with Jenny about how to make this sweet treat at home, she recommended adding pretzels. Genius!

I took Jenny’s tip and got busy in the Sparkle Kitchen. I tried the recipe several ways to include boiling and frying the pecans to match Swint’s. All taste testers agreed the texture was a bit grainy. Fried pecans are delicious all by themselves. I added a dash of Trader Joe’s Chilli Lime seasoning and my husband took them out. They didn’t go to waste.

Salty Sweet Covered White Chocolate Fried Pecans

Ingredients

  • 4 cups raw whole pecans, shells removed, fresh if possible
  • 1/2 stick unsalted butter, frozen
  • white chocolate
  • 2 cups thin pretzel sticks, broken into pieces
  • sea salt

Directions

1. Preheat oven to 350 F. Prepare a cookie sheets with parchment paper or nonstick foil.

2. Scatter the fresh pecans onto the baking sheet. Using a hand grater, grate the frozen butter on the pecans.

3. Bake the pecans for 10 to 15 minutes, gently shaking and turning the pan every few minutes. Be careful not to burn the pecans.

4. Remove the pecans from the oven and immediately sprinkle with the salt. Let the salted pecans cool for 15 minutes.

5. Melt the white chocolate in a medium microwave safe bowl. Microwave in 15 second intervals, stirring the white chocolate in between until completely smooth.

6. Working quickly, add the the salted pecans and pretzels into the melted white chocolate and stir to coat. Pour the pecan mixture back onto the parchment covered baking sheet and flatten with a rubber spatula. Cool until hardened.

7. Break into bite sized pieces.
