New Orleans Cold Brew Ingredients

  • 16 ounces dark roast coffee beans, ground course
  • 2 ounces chicory root
  • milk or a non-dairy option
  • simple syrup to taste (equal parts sugar and water)

NOTE: Cafe Du Monde Coffee has chicory already added. Use 16 ounces and subtract the 4 ounces of chicory root.

Directions

Add the ground coffee and ground chicory into a stock pot.

Pour 2 quarts of water over the grounds and stir.

Cold Brew Coffee Steeping

Cover for 12 hours to steep. Strain through the fine mesh strainer into a jar with a lid.

How To Serve Cold Brew Coffee

Pour equal parts cold brew with equal parts milk or non-dairy alternative. Stir in simple syrup to taste.

If you have visited the French Quarter in New Orleans, you have more than likely visited Café du Monde and bit into a magical french beignet with their Café au lait. They have been serving them since 1862 an it is all they serve.


Beignet Trivia


  • Pronounced: Ben-yei.
  • Beignet is a celtic word that means “to-raise.”
  • Beignets, come from the French-Creole colonists. Early French settlers brought beignets with them as they migrated to the eastern coast of Canada, a region called Acadia, in the 17th century. The Acadians endured a forced migration as the British took control of the region a hundred years later and brought the concept of this classic New Orleans dessert down with them to New Orleans in the 18th century.
  • Some historians believe the Ursuline Nuns of France brought the recipe over in 1727.
  • New Orleans Beignets are a light and airy French pastries. They are sometimes called French doughnuts. They are made up of yeast, sweetened dough, squared dough cuts, fried, and dusted with powdered sugar. Doughnuts contain more eggs which cause them to be more dense with less air pockets than the beignet.

How to Make Classic New Orleans Beignets Recipe

Ingredients

Makes 16 Beignets

*Read recipe through including notes before you begin.

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup evaporated milk, room temperature
  • 1/8 cup butter, room temperature
  • 1/8 cup shortening
  • 6 1/2 bread flour, sifted
  • 1 quart cottonseed oil (traditional beignet oil) or canola oil
  • 1 cup powdered sugar

New Orleans Beignets Instructions

1. Add the warm water, sugar, and yeast to a small bowl and stir. Set aside for 10 minutes to activate.

2. Grease a large mixing bowl and set aside. 3. Using a stand alone mixer or a hand mixer with paddle attachment/s, combine the eggs, milk, and salt at low speed. 4. When the yeast has activated, add the mixture to the bowl. Add 3 cups of the sifted bread flour to the bowl and begin to mix on low. 5. Add the shortening and the butter. Continue to mix until just incorporated. 6. Add in the remaining flour and mix until just combined. Be careful not to over mix. This is a sticky dough. BE CAREFUL NOT TO OVER MIX! 7. Turn the dough into the prepared bowl and cover with a dough towel or plastic wrap. Set in a warm place for two hours to rise.

8. Add the oil to a large heavy pot and insert a candy thermometer. 9. Place paper towels on top of a cookie rack and place on a baking sheet. Set aside. 10. Generously flour a work surface, and a rolling pin with flour. Roll the dough out to 1/4″ thick. Slice the dough into 12 squares with a pizza cutter.

11. Heat the oil to 350° F. 12. Drop each square into the oil until just golden brown. Flip and fry until golden brown. Remove from the oil immediately and place on the prepared baking sheet. Repeat using the rest of the dough squares.

13. Dust with powdered sugar and serve with hot with a cup of Cafe Du Monde chicory coffee.

RECIPE NOTES

  • Beignets are best served hot and fresh but can be kept in an airtight container for 1-3 days. Simply reheat them in the microwave for 10 to 15 seconds. Re-dust with powdered sugar.
  • This is a sticky dough. You will need more flour on your work surface that you expect.
  • Using a scraper tool to slide the cut Beignet dough into the hot oil will keep the beignets from

King Cake Trivia

  • King cakes symbolize the Epiphany, a Christian feast day in January. It celebrates the visit of Three Kings who visited the Christ Child.
  • King Cakes are braided and oval-shaped to symbolize the unity of faiths and to portray the route used by the kings to get to the Christ Child.
  • King Cakes are decorated in traditional Mardi Gras colors. Purple represents justice. Green represents faith, and gold represents power.
  • A small baby, symbolizing baby Jesus, is hidden inside each king cake. The person who finds is is responsible in hosting the next Mardi Gras celebration and providing the next king cake.
  • King Cake is eaten between  Jan. 6, the feast of the Epiphany, to Mardi Gras Day, the day before Ash Wednesday.

Printable Recipe: Sparkling Charm Cream Cheese Glaze

  • 4 ounces cream cheese, whole fat/softened
  • 1/4 cup unsalted butter, softened
  • 4 tablespoons heavy cream + more to reach your desired consistency
  • 1 teaspoon vanilla extract (This one is my favorite!)
  • 1 cup powdered sugar

Instructions

1. In a bowl, add the cream cheese, powdered sugar, cinnamon, vanilla, and almond extract. Mix until well combined. Set aside.

2. Preheat oven to 350° F. 3. Line a baking sheet with parchment paper. 4. Open the cinnamon rolls and carefully pull them apart. 5. One at a time, unroll the dough.

6. Cut in half.

7. Cut the two halves down the center equaling 4 strips.

9. Pull the dough a little to make it longer and twist.

10. Create a circle with the dough and pinch to hold it together. Repeat with the rest of the cinnamon rolls.

12. Bake on middle for 10 to 12 minutes or until just golden brown. Be careful not to overbake.

I like to remove them from the oven when they are cooked through and just on the brink of golden brown.

For this batch, I chose the most imperfect mini cake to get the baby. I also line up Chic-Fil-A tater tots, give them catsup belly buttons and eat the mis-shaped ones first to make them feel special. Ingredients

Cream Cheese Cookie Dough

  • 1/2 cup butter
  • 4 ounces cream cheese, room temperature
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 3/4 cups cake flour, sifted
  • yellow, purple, green sprinkles

  • 1 cup powdered sugar
  • 1 tablespoon water
  • 1/2 teaspoon clear vanilla
  • sprinkles

Preheat oven to 375° F. Line baking sheet with parchment paper.

Whisk the baking powder into the cake flour. Set aside.

Cream together the butter and cream cheese with an electric mixer. Add the sugar and beat for 1 minute. Add egg and the extracts and beat until combined.

Two tablespoons at a time, add the cake flour mixture and continue mixing until just combined. Be careful to not over mix. This is a sticky dough.

Refrigerate the dough for an hour. This is an important step!

Sprinkle a little flour onto clean hands and roll the cream cheese cookie dough into 1 inch balls.

Dip a flat bottomed glass into flour and gently press each ball to flatten just a tiny bit. Don’t flatten too much or the cookies will not have a puffy cloud-like texture.

NOTE! KEEP AN EYE ON THESE CREAM CHEESE COOKIE BEAUTIES! Remove them from the oven the second the edges turn golden.

Immediately place them on a cooling rack to cool.

To make the icing, whisk together the powdered sugar, vanilla, and water until well combined.

Drizzle the cooled cream cheese cookies with the icing and sprinkle away.

Mardi Gras Cream Cheese Cookies

Mardi Gras Cream Cheese Cookies. These heavenly light as air cookies are a perfect way to celebrate Mardi Gras. They will melt in your mouth.

Ingredients

Cookie Dough

  • 1/2 cup butter
  • 4 ounces cream cheese room temperature
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 3/4 cups cake flour sifted
  • yellow purple, green sprinkles

Icing

  • 1 cup powdered sugar
  • 1 tablespoon water
  • 1/2 teaspoon clear vanilla
  • sprinkles

Instructions

Cream Cheese Cookie Dough

  • Preheat oven to 375° F. Line baking sheet with parchment paper.
  • Whisk the baking powder into the cake flour. Set aside.
  • Cream together the butter and cream cheese with an electric mixer. Add the sugar and beat for 1 minute. Add egg and the extracts and beat until combined.
  • Two tablespoons at a time, add the cake flour mixture and continue mixing until just combined. Be careful to not over mix. This is a sticky dough.
  • Refrigerate the dough for an hour.
  • Sprinkle a little flour onto clean hands and roll the dough into 1 inch balls.
  • Dip a flat bottomed glass into flour and gently press each ball to flatten just a tiny bit. Don’t flatten too much or the cookies will not have a puffy cloud-like texture.
  • Bake for 9-12 minutes.

Honey Lime Drizzled Coconut Shrimp

Air Fryer Honey Lime Drizzled Coconut Shrimp

I cannot stop with the new air fryer.  Last night I created this quick and easy recipe. I made half in the air fryer and half in the oven. Cooked both ways, this is a great recipe for your summer dinner rotation.

Let’s take a few shrimps for a coconut dip!

Honey Lime Drizzled Coconut Shrimp

Ingredients

3/4 cup all-purpose flour
1 teaspoons black pepper
3 large eggs
1 cup coconut, flaked and unsweetened
3/4 cup panko (Japanese Bread Crumbs)
24 medium shrimp, tail-on, raw, and detained
cooking spray
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup honey
lime wedges

Instructions

Whisk together the flour, pepper, and the salt in a small bowl

Lightly beat the eggs in a small dish with a fork.

Toss together the panko crumbs and the coconut.

Time to go for a dip little shrimpy!

Holding the shrimp by the tail…

  • Dip the shrimp in the flour mixture and give it a shake.
  • Then a quick dip in the egg wash.
  • Next a dip into the panko and coconut mixture. Give it a good press.
  • Finally a quick spurt of cooking spray.

Place half of the shrimp in air fryer basket, and cook at 400°F for 3 minutes. Flip the shrimp and cook another 4 minutes.

OR

Place the shrimp on a baking sheet lined with parchment and place them in a 400°F on the top rack. Cook them for two minutes, flip them, and cook for two more minutes.

Season with salt and pepper.

Repeat with the remaining shrimp.

Give the shrimp a drizzle of honey  and a quick squeeze of lime just before serving.

It will be hard not to eat them while the others cook. BE STRONG! SMILE!
