Rainbow Veggie Wraps

Ingredients

Spicy Carrot Hummus

  • 1 1/2 cup chickpeas
  • 1/2 cup sliced carrots, roasted at 350° F until soft
  • 2 garlic cloves
  • 2 tablespoons tahini
  • 1/4 cup olive oil
  • 4 tablespoons fresh lemon juice
  • 2 tablespoons red pepper flakes

Wraps

  • 8 spinach tortilla wraps
  • cucumber, sliced into sticks
  • yellow + red + orange peppers, cut into sticks
  • spinach leaves, julienned
  • purple cabbage, shredded
  • carrot sticks, sliced into sticks

Optional

  • 8 ounces cream cheese

Instructions

Spicy Carrot Hummus

Add all of the ingredients into a food processor and pulse until completely smooth.

Assembly

Spread a wrap with the Spicy Carrot Hummus.

Optional: Spread 1/2 with cream cheese and 1/2 with spicy carrot hummus. WOW FACTOR!

Rainbow Veggie Wraps with Spicy Carrot Hummus

Starting 1/4 of the way down from the top, lay on the veggies in rows.

Roll tightly being careful not to tear the wrap.

The Best Old Fashioned Oatmeal Pies

Do you remember these sweet beauties? I sure do!

When I was a little girl my mother would sometimes purchase an oatmeal pie wrapped in cellophane at a local gas station. When she got in the car she would split it in half to share. She always gave me the biggest half. We would take small bites to make it last and agree that this is by far the best sweet treat in the world. Isn’t the best feeling to recall time spent with someone you love dearly? That tiny little pie shared between mother and daughter created such joy and a memory that warms my heart to this very day. Smiling!

Today I am sharing my homemade recipe for The Best Old Fashioned Oatmeal Pies with YOU! Soft, creamy, chewy, oatmeal cookie filled with a lightly whipped cream cheese. Grab your apron!

Oatmeal Cookies

The Best Old Fashioned Oatmeal Pies

Makes 8 to 10

Ingredients

Oatmeal Cookies

  • 1 1/2 cup all purpose flour, leveled
  • 1/2  teaspoons coarse salt
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 3/4 cup light brown sugar, packed and leveled
  • 1/2 cup granulated sugar
  • 1 tablespoon molasses, unsulfured if available
  • 1 teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 1 1/2 cup rolled oats (AVOID USING INSTANT OATMEAL!)

Cream Filling

  • 8 ounces cream cheese
  • 1/4 cup butter
  • 1/2 cup powdered sugar
  • dash of cinnamon

Instructions

Cookies

Preheat oven to 350° F. Place rack in the center of the oven.

Line a cookie sheet with parchment paper.

Add the flour, salt, baking powder, baking soda, and cinnamon into a bowl and whisk together. Stir in the oats. 

Add the butter, brown sugar, granulated sugar, and molasses into the bowl of a stand mixer. (A medium mixing bowl and a hand mixer works just as well.) Mix at medium speed for 4 to 5 minutes until light and fluffy. Add the vanilla and mix until just combined. Add in the eggs one at a time and mix until combined.

Slowly add flour and oatmeal mixture into to mixing bowl and mix until just combined. Avoid overmixing.

Use a 2 inch cookie scoop and scoop batter onto a baking sheet 4 inches apart.

Oatmeal Cookie Dough

Lightly wet your palm and give each cookie a gentle press.

Oatmeal Cookies

Bake for 8 to 10 minutes until just the edges start to turn golden brown. Remove from oven.

Cool for a few minutes on the pan. Use a cookie spatula and move the cookies to a cooling rack. 

Filling

In a mixing bowl, mix the cream cheese, butter, cinnamon, and powdered sugar until smooth. 

Assemble the Oatmeal Pies

Dalop a mound of filling onto a cooled oatmeal cookie with a spoon. Spread with the back of the spoon. Place a second oatmeal cookie on top. Repeat with remaining cookies. 

Notes + Tips

  • Be sure to use ROLLED OATS and AVOID using QUICK OATS OR INSTANT OATMEAL for these cookies. Quick oats and instant oatmeal absorb liquid differently which equal a dry cookie verses a chewy cookie.
  • Keep a close eye on these cookies. They are done when the edges become golden. Avoid overbaking.
  • These cookies are delicious cold!
  • These make a great take-away gift for a party. Wrap them individually in plastic wrap and place them in a bowl for guests to take when exiting.
  • Bag them individually, pop on a personalized label, tie on a pretty bow, and use them as place cards at your next dinner party!

Oatmeal Cookies

Salmon is Good For You!

Nutrition

Did you know a 4 ounce serving of salmon is about 200 calories! It is low in saturated fats and a good source of protein. It is also the best source of vitamin B12, full of potassium and vitamin D.

Salmon or Chicken

Also note, chicken and salmon are both great sources of protein, but salmon beats chicken with it’s banging Omega-3 content.

How Often Can you Eat Salmon?

You can eat salmon or any seafood up to 4 times a week.

Simple Salmon Rainbow Bake

Ingredients

Sparkle Tip: Keep a large bowl with a lid in your refrigerator for quick vegetable snacking. We call it the “Rainbow Snack Bowl.”

Note: In this recipe I didn’t use exact measurements for all ingredients. As I decorated the pan, I added leftovers to our “Rainbow Snack Bowl.” 

  • 2-4 salmon steaks
  • asparagus
  • 5 purple potatoes, sliced thin
  • radishes, sliced thin
  • broccolini, sliced in half
  • orange, white, or purple cauliflower, sliced thin
  • grape tomatoes
  • 1 large banana pepper, sliced
  • fresh pineapple, sliced
  • 1 lemon, sliced
  • fresh dill
  • sea salt
  • ground pepper
  • 1/4 cup virgin olive oil

Instructions

Preheat oven to 450 F. Line a large sheet pan with parchment paper.

2. Place the salmon steaks onto the pan and arrange the vegetables and the pineapple around them.

3. Drizzle with olive oil and sprinkle on the salt, pepper and dill. Place a few lemon slices on the salmon. 

4. Bake for 13 to 15 minutes. Serve with lemon slices.

You read that correctly. These are delicious, light, fluffy and the perfect thing to eat when the doctor tells you to eat things that are green.

Toasted Coconut Matcha! Matcha! Matcha! Marshmallows

Toasted Coconut Matcha! Matcha! Matcha! Marshmallows

Ingredients

7 ounces sweetened shredded coconut, toasted
1 tablespoon matcha powder
3 packets of unflavored gelatin
1 cup water
1 ½ cups sugar
1 cup light corn syrup
dash of kosher salt
1 teaspoon clear vanilla extract
confectioners’ sugar for dusting
cooking spray

Directions

1. Sprinkle half the toasted coconut in an 8 by 12-inch nonmetal pan.

2. Combine the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.

3. Combine the sugar, matcha powder, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees F on a candy thermometer. Remove from the heat.

4. With the mixer on low speed, slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.Toasted Coconut Matcha! Matcha! Matcha! Marshmallows

5. Pour in the marshmallow batter and smooth the top of the mixture with damp hands. Sprinkle on the remaining toasted coconut.

6. Allow to dry uncovered at room temperature overnight.

8. Remove the marshmallows from the pan and cut into squares. Roll the sides of each piece carefully in confectioners’ sugar.

Store uncovered at room temperature.

Ingredients

beet tortilla wraps
2 tablespoons beat juice
fresh spinach leaves
carrots, sliced into matchsticks
beets, sliced into matchsticks
kohlrabi, sliced into matchsticks
green onions
spicy hummus
pastry brush
salt and pepper to taste

Directions

1. Lay a tortilla wrap flat.

2. Spread on a layer of hummus.

Air Fryer Crunchy Spicy Avocado Fries

Crunchy! Creamy! Spicy! YUM!

I just got an air fryer and boy do I love it! I whipped up these little crunchy dandies for my honey the other night and they were a hit. I decided to drop the flour, cooking spray, and the egg wash in the recipe I found online and spice them up a bit to give them a little kick. Let me tell you how I made them.

Instructions

1. Whisk together the water and the Sriracha.
2. Toss the panko crumbs, salt, and red pepper flakes in a small bowl.

Time to Dip!

One at a time, place each avocado wedge into…

…the Sriracha mixture.

…then the panko, carefully pressing to adhere.

4. Place them in the air fryer basket making sure to keep them in a single layer.

5. Cook at 400 degrees for 4 minutes and give them a careful flip using tongs. Cook for 3 to 4 more minutes until golden brown.

How to Make Pickled Avocados

Living in the PNW there is no shortage of wonderful foods to try. With the famous Pike’s Place Market, fresh seafood, and locally grown everything, this place has a never ending list of interesting things to try. Recently I had a piece of pickled avocado on a street taco in Seattle.

…IT WAS AHHHH-MAZING! I bought another taco just for the avocado.

I made a note of the experience in my “Sparkle Book” (brainstorm notebook) as something to attempt making for Sparkling Charm. Well, I got on it like blue bonnet because I could not stop thinking about them. I have decided the recipe is ready to share with you.

If you are an avocado lover you must give these a try.

This recipe is dedicated to the lovely Carla Bullimore. My dear friend and summer pickling buddy.

How To Eat Pickled Avocados

Eat them alongside a cheeseburger, on a hamburger, on toast, on tacos, on a BLAT sandwich, on salads, OR Right Out Of The Jar.

They are also a Show-Stopping Garnish On A Bloody Mary!

How To Make Pickled Avocados

Ingredients

2 medium avocados, just ripe but not soft
1 small white onion
2 cups white vinegar
1/2 cup water
4 tablespoons sugar
1 tablespoon kosher salt
4 tablespoons pickling spice

Directions

Combine the vinegar, water, sugar, salt, and pickling spice in a small saucepan and bring to a boil. Stir to dissolve the salt and sugar. Remove the pan from the heat and let the mixture cool to room temperature.

Halve, pit, and peel the avocados, then cut them into 1/4″ thick slices.

Peel and slice the onion into 1/4″ thick wedges.

Place the avocado and onion slices into a pint-size glass jar.

Pour the cooled brine into the jar and cover.

Gently turn the jar upside down and then upright again to distribute the brine evenly.

Refrigerate for 2 hours.

The pickled avocado slices will keep, tightly sealed in the refrigerator, for up to 1 week.

Ingredients

1/2 cup whole milk
1/2 cup half and half
1/2 cup of white chocolate chips
2 Packets of Matcha Powder (I picked this up at Trader Joe’s.)
1/4 tsp of vanilla
1 tsp honey

Toppings

whipped cream
Lucky Charm mini marshmallows right out of the cereal box or mini rainbow marshmallows

Directions

Combine all ingredients in a saucepan. Whisk constantly over medium heat until matcha powder and chocolate chips are fully dissolved and the whole mixture is hot.

Top with homemade or canned whipped cream and sprinkle with a pinch of matcha powder and Lucky Charm mini-marshmallows.

Rainbow Cous Cous Cabbage Cups

Just finishing a Sparkling Charm post on rain and the winter blues, I decided to create a savory and delicious meal that is cheerful and pretty to eat.

Whether you live in a climate with warm sunshine or rain and snow, this recipe will add a RAINBOW to your day.

Rainbow CousCous Cabbage Cups

Ingredients

1 purple cabbage, leaves steamed and cooled
2 cups cooked cous cous, prepared as per box directions
1 cup fresh or thawed and drained frozen peas
1 medium red bell pepper, chopped and seeds removed
1 medium yellow onion, peeled and chopped
3/4 cup walnuts, chopped
1 pinch salt
1 pinch black pepper
optional: skinless chicken breast, baked and shredded

Directions

1. Prepare a 9 x 9 baking dish with cooking spray.

2. In a mixing bowl, gently toss the cous cous, peas, red bell pepper, yellow onion, walnuts, chicken (optional), salt and pepper.

3. Cupping a cabbage leaf in your hand, spoon in the cous cous mixture and place in the prepared baking dish.

4. Repeat until the dish is filled.

5. Bake for 35 minutes at 350 degrees.

Peanut Butter Pin Wheels

Peanut Butter Pinwheels.

Standing in Trader Joe’s the other day I had a complete “space out”in front of the peanut butter. (…What I like to call a “Magnolia Moment.”) Everything around me disappeared. It was just me and the peanut butter.

I was suddenly lost in thought thinking about my Dear Mama and the simple peanut butter candy she sometimes made for me as a child. I could see her beautiful smile as she rolled the candy into a log while letting me lick the peanut butter left on the spoon. Then she gave me a tiny sample of the final product before she slipped it into the refrigerator for what seemed like the longest hour in history!

Peanut Butter Pinwheels

Ingredients

1 1/2 boxes powdered sugar, sifted (clumps removed)
1 stick unsalted butter, softened
16 ounces peanut butter, creamy
1 teaspoon cold water, a little more if needed
wax paper

Peanut Butter Pinwheels

Directions

  1. Sprinkle a sheet of wax paper with 1/4 cup powdered sugar and set another 1/4 cup aside.
  2. In a mixing bowl, add one box of sifted powdered sugar, the softened butter, and the water.  Mix the ingredients together forming a soft ball. The ball should be smooth. If it is sticky, add a little powdered sugar. If it is stiff, add a sprinkle of water.
  3. Place the powdered sugar dough ball on the prepared wax paper. Sprinkle the ball with powdered sugar.
  4. Roll the candy dough ball out into a 1/4 inch thick rectangle.
  5. With a knife, slice off the uneven edges of the rectangle. (…Have a little taste of the cut edges.)
  6. Gently spoon the peanut butter onto the rectangle. Use the back of a spoon to spread it to the edges.
  7. Carefully lift the wax paper to lift a long edge and roll the peanut covered sheet into a log. (Avoid rolling the wax paper inside the log. Only use it to get the log started. )
  8. Cool the log in the refridgerator for one hour.
  9. Slice into 1/4 inch pieces. Enjoy!

1 stick unsalted butter, softened
16 ounces peanut butter, creamy
1 teaspoon cold water, a little more if needed
wax paper

Instructions

Sprinkle a sheet of wax paper with 1/4 cup powdered sugar and set another 1/4 cup aside.

In a mixing bowl, add one box of sifted powdered sugar, the softened butter, and the water.  Mix the ingredients together forming a soft ball. The ball should be smooth. If it is sticky, add a little powdered sugar. If it is stiff, add a sprinkle of water.

Place the powdered sugar dough ball on the prepared wax paper. Sprinkle the ball with powdered sugar.

Roll the candy dough ball out into a 1/4 inch thick rectangle. With a knife, slice off the uneven edges of the rectangle. (…Have a little taste of the cut edges.)

Gently spoon the peanut butter onto the rectangle. Use the back of a spoon to spread it to the edges.

Carefully lift the wax paper to lift a long edge and roll the peanut covered sheet into a log. (Avoid rolling the wax paper inside the log. Only use it to get the log started. )

Cool the log in the refridgerator for one hour.

Slice into 1/4 inch pieces. Enjoy!

DIY Gold Polka Dot Coffee Cup

Supplies

liquid gold leaf

circular sponge 

white coffee cup, oven safe, clean and dry

Directions

  1. On a clean dry cup, dip the circular sponge brush into the liquid gold leaf. You only need a little bit. Too much will cause drips so take it easy.
  2. Carefully sponge on the polka dots spinning the brush to finish.
  3. Bake in the oven at 350° for 45 minutes.
  4. Turn off the oven and leave the cups to completely cool with the oven.
  5. Let the cup cure for 24 hours before using.

DIY Gold Foil Serviettes

In this season of Lent, I have been thinking about the folded cloth Jesus left in the empty tomb and the significance of why He did that. I would like to think that my need to be tidy and organized means I take after Jesus, but I have a feeling Him folding the linen cloth wasn’t a message to be tidy.

My dear mother shard a grand explanation with me I will never forget. She said, “Gwyn, Jesus folded the linen cloth He left in the tomb to signify that HE is coming back. So, let’s follow his lead. Anytime you have visited someone’s home for dinner and enjoyed the company and the meal, carefully fold your napkin and place it by your plate. Like Jesus, let this be a sign to the hostess that the company was dandy and the meal was delicious. YOU WILL BE BACK. ”

This cherished tradition I share with my mother has inspired me to add a touch of gold foil to a set of serviettes.

PS Serviette is a fancy word for napkin. It is fun to say. The link I have shared will give you the correct pronunciation.

DIY Gold Foil Serviettes

DIY Gold Foil Serviettes

Supplies:
6 white linen hemstitched serviettes, pressed
*I pick these up regularly at our local TJ Max.  You can get twelve linen hemstitched serviettes at just $15.00. A great deal!
Gold Foil Sheets
Deco Foil Liquid Adhesive
paint brush

Directions:

  1. In any design you choose, apply a thick coat of the liquid adhesive with a paint brush to a pressed serviette.
  2. Allow the adhesive to dry for at least two hours. It is ready when the adhesive becomes tacky.
  3. Place a gold foil transfer sheet on the glue placing the metallic side up.
  4. Press the sheet against the adhesive using your hands.
  5. Remove the sheets.
  6. If any areas are still tacky after removing the sheets, just apply the sheets again and repeat the process until there are no tacky areas.

That is it! DIY GOLD FOIL SERVIETTES! Pretty on any table!
