A Personal Candy Jewelry Necklace Memory

Do you remember candy bracelets and necklaces? I sure do. They will be burned into my brain forever. When I was a little girl my mother dressed me in a lovely ensemble for school photos. Just prior, I decided to style myself a bit further for the photo shoot with a partly eaten lovely candy necklace. What I didn’t anticipate was my mothers fury when the photos came in. Let me just leave it at that. SMILE!

The other day I spotted a pack of extra large candy bracelets at Nordstrom and giggled my head off at the “not so much fun at the time” memory.

Mama, if you are reading this, NORDSTROM CONSIDERS CANDY JEWELRY A FASHION PIECE! I knew I was on to something special!

Today I am returning to my childhood “stylist” occupation. I have crafted my own version of the candy bracelet using retro jelly beans! I am wearing this fun statement piece with a pair of  jeans and a blouse for a casual Easter party this weekend.

Supplies

  • 1 bag jelly beans “Jelly Belly Beans would make a cute bracelet too, but I went retro for mine.”
  • needle
  • .5mm stretch cord
  • scissors

Spring Crafts

Directions

Thread needle with the stretch cord.

Tie a double knot at one end of the cord. Leave at least four inches to tie the bracelet together.

Place the eye of the needle through the center of the first jelly bean and carefully slide the jelly bean to the double knot.

Continue to add jelly beans until the desired length is reached.

Tie the bracelet together by double knotting your two ends together and clipping off excess cord.

OH YESS-NESS! At first bite you get a crunch into the creamy shell of the pink chocolate. Next, the peanut butter mixture jumps in with a ka-pow and you have the perfect sweet treat!

A Fun Way To Share These Pink Beauties

Wrap these in cellophane envelopes or bags for a special Easter treat.

Pink Chocolate Peanut Butter Eggs

Pink Chocolate Peanut Butter Eggs Recipe

Ingredients

  • 1 1/2 cups powdered sugar
  • 3/4 cups creamy peanut butter
  • 1 tablespoons milk or water
  • 6 ounces Wilton Vanilla Candy Melts in Bright Pink
  • 6 ounces Wilton Vanilla Candy Melts in White
  • 3 ounces milk chocolate chips, white chocolate chips, or semi sweet chocolate chips

Note: You can use chocolate chips for the entire recipe. Regular chocolate will take a bit longer to set in the candy molds.

  • sprinkles (optional)

Peanut Butter Egg Ingredients

Peanut Butter Egg Instructions

Place the vanilla candy melts in a microwave safe bowl and microwave for 30 seconds. Stir. Repeat until melted.

Spoon the melted candy into each well of the egg mold/s coating the bottom and sides completely and refrigerate for 10 minutes. Set the candy melts aside.

Pink Chocolate Egg Shells

Add the powdered sugar, peanut butter, and two tablespoons of water or milk to a medium sized mixing bowl and mix by hand or by mixer at low speed until the mixture becomes softened and crumbly.

Mixing up a batch of Pink Peanut Butter Eggs

Remove the Pink Chocolate shells from the refrigerator and spoon a small amount (enough to fill the candy shell a little more than 1/2 full) of the peanut butter mixture into each mold well. Gently press the peanut butter mixture flat being careful not to break the shell.

Peanut Butter Filling - Pink Chocolate Eggs

Melt the milk chocolate chips in the microwave and spoon a tiny bit of the chocolate on top of the peanut butter, leaving enough room to add a final layer of pink vanilla candy. Refrigerate until hardened.

Re-melt the pink candy. Spoon over the peanut butter and chocolate completely covering the egg mold. Return to the refrigerator until set. Gently press each Peanut Butter Egg from each mold well. Decorate with icing and sprinkles.

Repeat the recipe with remaining ingredients.

Personal Reasons I Love Easter and the Golden Egg!

When I was little girl I could hardly wait for any holiday to arrive and Easter was no exception! Before I get to the DIY I want to share a few of my favorite memories.

Easter Fashion! I am talking head to toe beauty, friends! 

  • My mama wrapped my head tight with pink sponge curlers to create ringlet curls all over my head. Even though it hurt a little to sleep in those things, this to me was OH SO SPECIAL because there was nothing better than a spritz of White Rain hair spray for extra hold at the end. I learned that beauty comes with a price at an early age.
  • It was the one day of the year I got to wear a tiny lace bra with a fancy dress, lacy socks, and patten white leather shoes.
  • Mama painted my nails with clear polish. I loved the shine.
  • I got to wear light pink lip gloss, a little swipe of pink blush on my cheeks, and a dab of Charlie perfume on my wrists. Faint!

Easter Events!

  • Sunrise Service and the happiest music my ears have ever heard.
  • The search for an Easter basket full of fun treats left by the Easter Bunny. PS Still to this day I would take the coloring books, markers, and crayons over the candy any day of the week.
  • Eating colorful jelly beans in Sunday School before lunch!
  • Easter Dinner with family and friends.
  • The Bunny Hop Dance.
  • Dying Easter Eggs!  My mama didn’t just opt for the PAAS egg dying kit, she pulled out the Elmer’s glue and the sparkles to make them extra special. I will never forget the egg she covered in sequins. I wanted to keep it forever.

My mother always made everything extra special with added touches. Adding sequins to a dyed egg is only one of the bazillion things she did to make life Sparkle with Charm. My mother has taught me that little things really do mean everything.

I wonder if this explains my need to tie matching sheet sets together with large colorful bows in our linen closet?

  • THE EASTER EGG HUNT AND THE SEARCH FOR THE GOLDEN PRIZE EGG STUFFED WITH A FIVE DOLLAR BILL! 

Which brings me to today’s DIY, Fancy Golden Easter Eggs. They aren’t just perfect for the prize egg in an egg hunt. They are beautiful to use for Easter decor.

Right this minute your kitchen is filled with natural dyes. Red Cabbage! Turmeric! Blackberries! Coffee! Tea! Beets!

IF IT STAINS A CUTTING BOARD OR YOUR FINGERS IT WILL COLOR AN EGG FRIENDS!

A Fun Note About Natural Dyed Easter Eggs

  • I am sharing the recipes for the natural dying agents I used, but the fun comes with the mystery of the result. Perhaps try, chili powder, raspberries, grape juice, purple cabbage, or spinach?!?!?! Maybe consider dipping an egg in two colors! How To Make Natural Dyed Easter Eggs

Supplies

  • white eggs, boiled and cooled
  • *Recipes for these agents below: beets, kale, blackberries, coffee, matcha tea powder, and turmeric
  • pots
  • white vinegar
  • strainer
  • small bowls
  • metal spoon
  • white paper towels
  • drying rack
  • olive oil, optional
  • clear polyurethane, optional

Easter Egg Hunt-Naturally Dyed Eggs

Natural Dyed Easter Egg Directions

Cover eggs with water and bring to a rolling boil. Cover with a lid and remove from heat. Let them set for 10 minutes. Drain the water. Pat each egg dry.

Add a dying agent (see amounts I used below), 1 quart water, and 2 tablespoons white vinegar to a pot.

Note: If you add more water to cover ingredients, add more vinegar. The rule is 2 tablespoons of vinegar per 1 quart of water. Adjust accordingly. Place a natural dying agent in the pot using the amount listed below.

  • Beet dye: 2 medium purple beets,  chopped
  • Kale dye: 4 cups kale, chopped
  • Blackberry Dye: 1 cup blackberries, mashed
  • Coffee Dye: 1 quart strong black coffee, instead of water
  • Matcha Tea Dye: 6 tablespoons matcha tea per 1 quart water
  • Turmeric Dye: 5 tablespoons turmeric per 1 quart water

2. Bring to a boil, then lower the heat to medium-low. Allow the ingredients to simmer for 30 minutes.

Strain dye into a bowl.

Using a metal spoon, lower cooled hard-boiled eggs into a bowl of cooled dye, and let them soak for as little as 5 seconds or as long as overnight, depending on the depth of color you desire.

Remove eggs with spoon and pat dry with a white paper towels.

Dry on a wire rack.

Optional: Shine using a small drop of olive oil on a towel or spray paint them with a coat of polyurethane.

Natural Dyed Easter Egg Tips

  • If you are planning to eat the eggs and are using fresh eggs from a farmer vs. store-bought eggs, be sure to let them rest in the refrigerator for one week. They must have time to develop an air pocket inside, otherwise, they will be impossible to peel.
  • Natural Dyed Eggs, must be stored in the refrigerator within and hour and be eaten within a week.
  • If you are using these for Easter decor, dispose of them when the holiday is over. They are perfect for a compost bin.
  • This is my sure-fire easy peel tip.  Add 1/2 teaspoon of baking soda per 1 quart of water. Bring to a rolling boil, cover and remove from the heat. Let the eggs stand for exactly 10 minutes. Drain the eggs and peel under cold water. They peels will come off easily in large pieces.
  • Eggs must be stored in the refrigerator within and hour and be eaten within a week.
  • If you are using your Natural Dyed Eggs for Easter decor, dispose of them when the holiday is over. They are perfect for a compost bin.

  • This is my sure-fire easy peel tip.  Add 1/2 teaspoon of baking soda per 1 quart of water. Bring to a rolling boil, cover and remove from the heat. Let the eggs stand for exactly 10 minutes. Drain the eggs and peel under cold water. They peels will come off easily in large pieces.
  • Eggs must be stored in the refrigerator within and hour and be eaten within a week.
  • If you are using your Natural Dyed Eggs for Easter decor, dispose of them when the holiday is over. They are perfect for a compost bin.

Instructions

Cover with plastic wrap and chill for one hour before serving. Garnish and Serve!

The word crudités means raw, or rawness. Only pronounced in the plural, crudités are French appetizers consisting of sliced or whole raw vegetables. Moreover, they are typically dipped in a light vinaigrette or a dip.

What is the Difference Between Charcuterie and Crudités?

Charcuterie refers to the meat portion of a tapas platter or board, while Crudités is whole or sliced vegetables. Cheeses, dips, and sometimes candies are added to compliment either. I personally name my boards/platters by what I want to hi-light.

Chefs seem to fuss over popovers and specific steps for perfection. Me, I just go for it and they turn out fine every single time.

How To Make Classic Popovers

What Are Popovers and What Are they Made of?

Baked in a pan with deep wells, popovers are light rolls made from an egg batter with no yeast.

Tips For Perfect Popovers

The true secret to popovers is following the instructions to the T. From measurements to the temperature of the ingredients of the oven, they are all equally important.

SPOON AND LEVEL: For the dry ingredients spoon into a dry measuring cup and level with the back of a knife. This ensures a perfect portion.

ROOM TEMP INGREDIENTS: The room temperature ingredients forms an emulsion that traps air. While expanding in the oven the trapped air will expand and produce a light result.

LET THE BATTER REST: Resting the batter before baking will allow for an airy texture verses dense and chewy. At least 15 minutes will allow the starch to expand and the gluten to relax.

GREASE THE WELLS: Generously grease the wells with cooking spray for the popovers to fall out of the pan easily.

AVOID OPENING OVEN DOOR: Once you close to door to the oven don’t open it. The popoves will fall as flat as a pancake.

REMOVE IMMEDIATELY: Remove the popovers immediately from the pan to a cooling rack. Leaving them in the pan will cause soggy popovers.

LET STEAM ESCAPE: Immediately slice a tiny slit in each hot popover to allow seam to escape to avoid soggy popovers.

How To Get Popovers to Rise High

Part of the charm of popovers are their height. These tricks will ensure a high as the sky rise.

  • Heat the oven to 425° F. before the pan goes in pre-batter.
  • All ingredients must be room temperature.
  • Whip up the batter to add air just before filling the hot popover pan wells.
  • Avoid opening the oven while the popovers are baking. Don’t even crack the door for a tiny peek or your popovers will fall flat.

Popovers In A Muffin Pan

The answer is YES YOU CAN! I prefer the classic popover pan as it has a taller well and straight sides. The muffin pan will give you a shorter popover with a more dense texture and you will have to adjust cook time by a few minutes.

Makes 6 Popovers

Ingredients

  • 1 1/2 tablespoons unsalted melted butter | plus softened butter for greasing pans
  • 1 1/2 cups all-purpose flour, sifted
  • 3/4 teaspoon kosher salt
  • 3 extra-large eggs, room temperature
  • 1 1/2 cups whole milk, room temperature

Instructions

Preheat the oven to 425°F. Generously grease the popover pans with unsalted butter.

Whisk together the flour, salt mix and the room temperature eggs, milk, and warm melted butter until smooth. Let the mixture rest for 15 minutes.

Easy Peasy Popovers

Place the buttered popover pan in the pre-heated oven for exactly 2 minutes.

Next, remove from the oven and fill each of the popover wells just over half full and bake for exactly 30 minutes.

Don’t open the oven door to peek. Seriously, don’t peek! The popover game will be OVER! 😉

Remove from the oven and immediately place on a wire cooling rack. Put a tiny slit in them with a paring knife to release steam.

Serve hot or at room temperature.

How To Store Popovers

Let them cool completely and store them loosely in an airtight ziplock. If you don’t cool completely, they will become soggy and cannot be revived.

How To Reheat Classic Popovers

Reheat the popovers at 350° F for 5 to 10 minutes. Easy Peasy!

Roses

Roses no matter the color add a touch of elegance always. I chose three colors of blush-toned roses for this tablescape for eye-catching interest against the neutral tones.

Eucalyptus

I added just one sprig of eucalyptus to each of the two arrangements. A three stemmed spray would be stunning too.

Vases

These blush-roses arrangements are in two Serena and Lily Cayman Highball glasses. They are large enough to hold multiple stems and low enough for conversation. If you live close to a Trader Joe’s I always recommend them for inexpensive flowers. Both of the bouquets used for this tablescape were less than $30.00. One dozen roses are usually less than $10.00.

*This tablescape has two similar arrangements at each end of the table for balance. A third could be added depending on the size of your table.

Charming Centerpiece Touches

Wooden Bunny

The distressed wood bunny from Hobby Lobby is a darling addition to this elegant easter table.

Satin Ribbon

Tied around the wooden bunnies neck is a simple blush peach double-sided satin ribbon for a touch of extra texture.

Speckled Easter Eggs

Scattered down the center of the table are blush-toned speckled eggs. These are by Martha Stewart and I found them at TJ Maxx.

Small Wooden Bunnies

How cute are these tiny wooden bunnies at each place setting? You can pick these up in the dollar spot at Target in sets of two before Easter. Adding a thin blush peach ribbon tied around the wooden bunnies necks with names written in calligraphy on a paper tag would be another charming addition.

Place Mats

I used these round rattan placemats from Serena and Lily for many tablescapes in our home. I recommend catching these on sale. They come in sets of four.

Dinnerware

If you could have one basic white dinnerware place setting, I would hands down recommend La Porcellana Bianca Firenze. The detail is pretty and they can be used on a formal or a casual table. It is fun to mix and match them with different plates. I USE THEM ALL THE TIME! I used the dinner plate.

The muted green pottery salad plates are from Anthropologie home. Though I have had these awhile, you can still sometimes find them when searching “Anthropologie Sage Pottery Salad Plates” These Porcellana Bianca Firenze salad plates to match the dinner plate is another option.

Flatware

The flatware pattern in this tablescape is Reed and Barton – 18th century. The simplicity of the design makes the set versatile.

Antique Glasses

I purchased these antique iridescent wine glasses in Georgetown at an estate sale. They aren’t terribly difficult to find in antique stores and online. Simply type, “Iridescent glasses” into your search engine and you are sure to find them. There are even options for modern reproductions.

The state flower of Georgia and the signature flower of The Masters is the stunning azalea. Just in time for the tournament, there are over thirty varieties of azaleas that color the National Golf Club course in Augusta with fantastic blooms. The famous 13th hole is has over 1,000 bushes and with no surprise named “The Azalea.” Therefore, it just makes sense that The Masters signature cocktail be and the Azalea cocktail is the signature cocktail for the tournament.

  • 2 ounces of pineapple juice
  • 1 ounce fresh squeezed lemon juice
  • splash grenadine

Mixology | Instructions

Combine the vodka or gin, pineapple juice, lemon juice, and grenadine in a large glass or a mixing pitcher with ice and stir. Strain the mixture into an ice filled glass. (I used this fun round golf ball ice mold.) Garnish with a lemon wedge, a mint sprig and cherries.

I have loved egg salad sandwiches since I was a little girl and have continued to crave them here and there my entire life. They are like trendy song that you cannot get out of your head. Secondly, they are addictive. In fact, you might find yourself craving them and searching for them on local menus.

I have a feeling I am not alone when it comes to this delight.

When you bite into the soft bread, you teeth sink into a pillow of fluffy and creamy deliciousness that makes you feel jubilant . In fact, you might find yourself craving them and searching for them on local menus.

Today I am sharing my classic egg salad sandwich recipe with YOU!

Old Fashioned Egg Salad Sandwiches

History and Origin of the Egg Salad Sandwich

The egg salad sandwich was invented in 1762 shortly after the invention of mayonnaise in 1756. Therefore, eggs were easy to get and inexpensive. A genius mixed the two together, and served it on fresh baked bread. Alast, a show-stopper that has stood the test of time.

In addition, one of the earliest known printed recipes for egg salad for the egg salad sandwich was published in the 1896 edition of the Boston Cooking-School Cook Book written by Fannie Farmer.

Eggs have high levels of protein,lutein, choline, and B vitamins. Secondly, eggs help prevent breast cancer and macular degeneration while keeping hearts healthy.

Sparkle Tip: Swap the mayonnaise for whole greek yogurt. Fage is a fantastic choice and is easily found in most grocery stores. Swap the bread for lettuce!

This recipe makes 5 to 6 sandwiches and I used 10 eggs. Therefore, there are two eggs give or take in each egg salad sandwich.

The pimento cheese sandwiches aren’t the only star of the show at the famous Masters golf tournament in Augusta, Georgia.   • 10 fresh hard boiled eggs, peeled, cooled, yolks and whites separated, egg whites chopped
  • 1/2 cup Duke’s mayonnaise 1 teaspoon yellow
  • 2 teaspoon yellow mustard
  • 1 teaspoon fresh dill, minced
  • 3/4 teaspoon fresh cracked black pepper
  • 1 teaspoon salt, then to taste
  • fresh lettuce leaves, washed and dried
  • 10 slices fresh white bread, crusts removed

Egg Salad Instructions

1. Add the boiled egg yolks, mayonnaise, and mustard into a medium bowl and mash with a fork until smooth. Mix in the chopped egg whites, dill, pepper, and salt.

2. Between two pieces of bread, add a layer of lettuce, a big dollop of egg salad, and another layer of lettuce.

A Healthy Twist

  • Substitute the mayonnaise with greek yogurt.
  • Use lettuce as wraps instead of bread.
  • Use less yolks to taste.

You can also accessorize a multitude of ways just like a little black dress. Whipped cream, raspberries, blackberries, strawberries, peaches all give my pound cake a little extra fancy.

HOW TO MAKE A POUND CAKE: COMMON QUESTIONS

WHY IS IT CALLED POUND CAKE?

Pound cakes date back to the 1700’s and gets the name because of how it is made. Originally, the recipe called for one pound of butter, one pound of sugar, and one pound of eggs.

WHAT DOES ADDING SOUR CREAM TO A POUND CAKE DO?

.Because of the high fat content and acidity, sour cream adds moisture without thinning the cake batter, adds creaminess, controls browning, and helps to activate the baking soda.

WHY SHOULD I USE CAKE FLOUR VERSUS ALL-PURPOSE FLOUR IN A POUND CAKE?

Cake flour is lighter than all-purpose flour. Therefore, it makes a less dense cake.

WHY DO YOU WHIP THE EGGS IN A POUND CAKE?

Egg whites helps the cake to rise and creates great volume! Secondly, the egg whites create a beautiful crispy cracked crust.

Old Fashioned Melt In Your Mouth Sour Cream Pound Cake

Ingredients

  • 1 cup unsalted butter, softened
  • 3 cups granulated sugar
  • 6 fresh eggs, yolks and whites separated
  • 3 cups cake flour
  • 1 cup whole sour cream
  • 1/4 teaspoon baking soda
  • pinch salt
  • 1 teaspoon pure vanilla extract

TOOLS YOU’LL NEED

Instructions

Preheat the oven to 300° F. Grease and flour a bundt cake pan.

Using a stand mixer or a hand mixer, cream the butter and the sugar at medium speed. Next, add the egg yolks and vanilla and continue to mix until light and fluffy.

Whisk together the flour, salt and the baking soda together in a bowl. Add to sugar and butter mixture a little at a time. Next, add the sour cream and mix until combined.

In a separate mixing bowl, beat the egg whites to stiff peaks. Fold the fluffy egg whites into the batter.

Pour the Old Fashioned Melt In Your Mouth Sour Cream Pound Cake batter into the prepared bundt pan.

Bake for 1 1/2 hours. Insert a skewer into the hot cake and pull out gently. It is done if it comes out clean. Continue baking until the skewer comes out clean. Remove the Old Fashioned Melt In Your Mouth Sour Cream Pound Cake from the oven and place on a cooling rack for 15 minutes. Invert the cake onto a pretty cake stand or cake plate.

If you have visited the French Quarter in New Orleans, you have more than likely visited Café du Monde and bit into a magical french beignet with their Café au lait. They have been serving them since 1862 an it is all they serve.


Beignet Trivia


  • Pronounced: Ben-yei.
  • Beignet is a celtic word that means “to-raise.”
  • Beignets, come from the French-Creole colonists. Early French settlers brought beignets with them as they migrated to the eastern coast of Canada, a region called Acadia, in the 17th century. The Acadians endured a forced migration as the British took control of the region a hundred years later and brought the concept of this classic New Orleans dessert down with them to New Orleans in the 18th century.
  • Some historians believe the Ursuline Nuns of France brought the recipe over in 1727.
  • New Orleans Beignets are a light and airy French pastries. They are sometimes called French doughnuts. They are made up of yeast, sweetened dough, squared dough cuts, fried, and dusted with powdered sugar. Doughnuts contain more eggs which cause them to be more dense with less air pockets than the beignet.

New Orleans Beignet Recipe Snapshot

How to Make Classic New Orleans Beignets Recipe

Ingredients

Makes 16 Beignets

*Read recipe through including notes before you begin.

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup evaporated milk, room temperature
  • 1/8 cup butter, room temperature
  • 1/8 cup shortening
  • 6 1/2 bread flour, sifted
  • 1 quart cottonseed oil (traditional beignet oil) or canola oil
  • 1 cup powdered sugar

New Orleans Beignets Instructions

1. Add the warm water, sugar, and yeast to a small bowl and stir. Set aside for 10 minutes to activate.

2. Grease a large mixing bowl and set aside. 3. Using a stand alone mixer or a hand mixer with paddle attachment/s, combine the eggs, milk, and salt at low speed. 4. When the yeast has activated, add the mixture to the bowl. Add 3 cups of the sifted bread flour to the bowl and begin to mix on low. 5. Add the shortening and the butter. Continue to mix until just incorporated. 6. Add in the remaining flour and mix until just combined. Be careful not to over mix. This is a sticky dough. BE CAREFUL NOT TO OVER MIX! 7. Turn the dough into the prepared bowl and cover with a dough towel or plastic wrap. Set in a warm place for two hours to rise.

8. Add the oil to a large heavy pot and insert a candy thermometer. 9. Place paper towels on top of a cookie rack and place on a baking sheet. Set aside. 10. Generously flour a work surface, and a rolling pin with flour. Roll the dough out to 1/4″ thick. Slice the dough into 12 squares with a pizza cutter.

11. Heat the oil to 350° F. 12. Drop each square into the oil until just golden brown. Flip and fry until golden brown. Remove from the oil immediately and place on the prepared baking sheet. Repeat using the rest of the dough squares.

13. Dust with powdered sugar and serve with hot with a cup of Cafe Du Monde chicory coffee.

RECIPE NOTES

  • Beignets are best served hot and fresh but can be kept in an airtight container for 1-3 days. Simply reheat them in the microwave for 10 to 15 seconds. Re-dust with powdered sugar.
  • This is a sticky dough. You will need more flour on your work surface that you expect.
  • Using a scraper tool to slide the cut Beignet dough into the hot oil will keep the beignets from

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 1 1/2 cups warm water
  • 1/2 cup white sugar
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1 cup evaporated milk room temperature
  • 1/2 cup butter room temperature
  • 6 1/2 bread flour sifted
  • 1/4 cup shortening
  • 1 quart cottonseed oil traditional beignet oil or canola oil
  • 1 cup powdered sugar

Instructions

  • Add the warm water, sugar, and yeast to a small bowl and stir. Set aside for 10 minutes to activate.
  • Grease a large mixing bowl and set aside.
  • Using a stand alone mixer or a hand mixer with paddle attachment/s, combine the eggs, milk, and salt at low speed. When the yeast has activated, add the mixture to the bowl. Add 3 cups of the sifted bread flour to the bowl and begin to mix on low. Add the shortening and the butter.  Continue to mix until just incorporated. Add in the remaining flour and mix until just combined. Be careful not to over mix. This is a sticky dough.
  • Turn the dough into the prepared bowl and cover with a dough towel or plastic wrap. Set in a warm place for two hours to rise.
  • Add the oil to a large heavy pot and insert a candy thermometer.
  • Place paper towels on top of a cookie rack and place on a baking sheet. Set aside.
  • Generously flour a work surface, and a rolling pin with flour. Roll the dough out to 1/4″ thick. Slice the dough into 12 squares with a pizza cutter.
  • Heat the oil to 350° F. 12. Drop each square into the oil until just golden brown. Flip and fry until golden brown. Remove from the oil immediately and place on the prepared baking sheet. Repeat using the rest of the dough squares.
  • Dust with powdered sugar and serve with hot with a cup of chicory coffee.

Quick and Easy Chewy Carrot Cake Cookies

Today I am sharing my recipe with you. Grab your apron and a mixing bowl! You are going to love this recipe!

What do Carrot Cake Cookies Taste Like?

Topped with cream cheese and toasted walnuts, these chewy and moist carrot cake cookies are a fun and different way to enjoy all the flavors of carrot cake.

Quick and Easy Chewy Carrot Cake Cookies

Ingredients

Cookies

  • 1 Moist Carrot Cake Boxed Mix
  • 2/3 cup flour
  • 2 eggs
  • 1/3 cup coconut oil, melted
  • 1/4 cup sour cream
  • 1/2 cup brown or white sugar

Cream Cheese Frosting

  • 4 ounces cream cheese, softened
  • 1/4 cup butter, unsalted and softened
  • 1 1/2 cup powdered sugar
  • 1 teaspoon vanilla
  • walnuts, toasted and chopped

Instructions

Carrot Cake Cookies

Preheat oven to 350° F.

Line a baking sheet with parchment paper.

Add the carrot cake mix, flour, eggs, coconut oil (melted and cooled, sour cream, and vanilla to a mixing bowl. Mix on medium speed until just combined. Avoid over-mixing. The dough will be thick and sticky.

Using a large spoon, drop dollops of the dough onto the prepared baking sheet. Dip the bottom of a glass into the powdered sugar and press the dough down to just about 1/4 inches in thickness.

Bake for 10 to 12 minutes or just until the bottoms are golden brown. Cool on a wire rack.

Frost generously with cream cheese frosting and sprinkle with walnuts.

In a mixing bowl, add the cream cheese, butter, powdered sugar, and vanilla into a mixing bowl. Mix on medium speed until smooth.

    Cake

    1 boxed angel food cake, baked in 2-8″ round cake pans and cooled

    Creamy Dreamy Pink Pineapple Frosting + Filling

    • 1 1/2 cup Pinkglow pink pineapple crushed with juice

    Cut the pink pineapple into chunks and crush with a potato masher. Leave the crushed pink pineapple in it’s juices.

    • 3.4 ounce package dry instant vanilla pudding
    • 2 cups whipped cream
    • Optional Garnish: Maraschino Cherries + Pink Pineapple Slices

    Directions

    Frosting and Filling

    Add the crushed pineapple with juice from crushing and the vanilla pudding powder to a medium bowl. Stir gently. Fold in the whipped cream until just combined. Let the mixture stand for 5 minutes.

    Place 1 angel food cake round on a pretty plate or cake stand. Add a large dollop of the dreamy creamy mixture on top of the cake and spread to the cakes edge.

    Add the second angel food cake on top of the filling gently. Add the rest of the creamy dreamy pink pineapple filling to the top of the cake and gently frost the cake all over.

    • 4-1/2 " thick slices Pinkglo pineapple cut into 8 triangles each
    • *Pinkglow pineapples can be found in select grocery stores or ordered online at Tropical Fruit Box. Want to know more about this beautiful pink pineapple Click here.
    • 1 cup pizza sauce
    • 1 cup fresh mozzarella shredded, sliced, or pearls

    If you prefer to shred, I recommend shredding a fresh mozzarella ball verses pre-shredded mozzarella in a bag. It makes a tasty difference.

    • 4 slices Canadian bacon chopped
    • fresh basil for garnishing

    Instructions

    Pizza Crust

    • Grease a 12 to 14 inch pizza pan with olive oil. Set aside.
    • Whisk together 1 cup of the flour, yeast, sugar, and salt in a large bowl. Pour in the water and oil. Stir until blended.  Gradually add the remaining flour a little at at time to form a soft slightly sticky dough. Turn the dough onto a floured surface knead until smooth and elastic. This will take about 5 minutes. Cover and let the dough rest for 15 minutes.
    • Sprinkle a little flour on the pizza dough and stretch the dough onto the prepared pizza pan.

    Preheat Oven to 450° F.

      Build The Pink Pineapple Pizza

      • Spoon on the pizza sauce.
      • Top with mozzarella cheese.
      • Sprinkle on the Canadian bacon.
      • Arrange the pink pineapple across the pizza. YUM!

      Bake

      • Bake for 12 to 15 minutes until the cheese is just melted.
      • Garnish with fresh basil.

      • 2 cups white vinegar
      • 2 tablespoons sugar
      • 1 teaspoon whole mustard seed
      • 1 teaspoon anise seed
      • 1 teaspoon peppercorns
      • 1/2 teaspoon kosher salt
      • 1/4 cilantro, stems removed
      • 1 large jalapeño, stem and seeds removed/cut into rings

      Directions

      In a small saucepan, add the vinegar, sugar, lime juice, mustard seed, peppercorns, anise seed, and kosher salt. Bring to a simmer and stir until dissolved. Turn off heat and cool in the refrigerator for 1 hour or until cold.

      Arrange the pink pineapple slices, jalapeño rings, and the cilantro in a jar or a container with a lid. Pour the cold pickling liquid into the jar.

        Grab your aprons! I am sharing my personal spin on a classic sugar cookie cutout recipe with you adding a touch of cardamom, a bit of orange juice, and a sprinkle orange zest to the dough!

        The Best Sugar Cookie Cutouts Recipe

        Ingredients

        Yield: Makes 1 dozen 4″ cookies

        • 2 cups cake flour, plus more for dusting
        • 1 teaspoon baking powder
        • 1/4 teaspoon salt
        • 1 teaspoon cardamom
        • 1 sticks unsalted butter, room temperature
        • 1 cup granulated sugar
        • 1 large egg, beaten at room temperature
        • 1 teaspoon pure vanilla extract
        • 2 tablespoons fresh squeezed orange juice
        • 1 tablespoon orange zest

        Directions

        Sugar Cookie Cutout Dough

        1. Sift flour, baking powder, cardamom, and salt into a medium mixing bowl.

        You can use a whisk to mix if you don’t have a sifter.

        2. On high speed in a large mixing bowl, mix the room temperature butter and sugar until fluffy and light in color. This step takes 5 minutes. Beat in the room temperature beaten egg, vanilla, orange juice, and orange zest. Mix until well combined.

        3. Turn the mixer to low and add in the flour in two batches until just combined. Stop when just combined! Over mixing the dough = One ?? ? tough cookie. 

        4. Divide the sugar cookie cut-out dough between two pieces of plastic wrap, shape into disks, wrap and refrigerate for at least one hour until firm or overnight.

        Cutting Out The Cookies 

        1. Line two baking sheets with parchment paper. Working with one disk of dough at a time, roll out the dough to 1/4 inch thick on a floured surface dusting with flour as needed. Cut out shapes with cookie cutters. Place them on a/the prepared baking sheet/s 2 inches apart. If the dough becomes soft, refrigerate again until firm. Gather the scraps, wrap and refrigerate until firm, and cut out more cookies.

        2. Refrigerate the cookie cutouts for 30 minutes until firm.

        Sparkle Tip:

        I use measuring strips for the perfect height and with a stainless steel rolling pin. I have not tried this dandy looking  thing, but it looks easy to use.

        Baking

        1. Position oven racks in the lower thirds of the oven and preheat to 350° F.

        2. Remove the chilled cookies from the refrigerator and bake switching the pans 1/2 way through for 12 to 14 minutes. The Cut-Out Sugar Cookies are done when they are slightly puffed and a light golden in color. Remove the cookies from the oven and leave them on the cookies sheets for 5 minutes to cool. Move the still warm cookies to a cookie rack to cool completely before icing them.

        All ovens are different in baking times. Keep an eye on your sugar cookies! They are ready to come out of the oven when they are just puffed and are on the verge of browning on the bottoms. This ensures a soft cookie and is the secret to keeping them delicious in a container for a few days.

        Cutting Out The Cookies 

        • 1. Line two baking sheets with parchment paper. Working with one disk of dough at a time, roll out the dough to 1/4 inch thick on a floured surface dusting with flour as needed. Cut out shapes with cookie cutters. Place them on a/the prepared baking sheet/s 2 inches apart. If the dough becomes soft, refrigerate again until firm. Gather the scraps, wrap and refrigerate until firm, and cut out more cookies.

        • 2. Refrigerate the cookie cutouts for 30 minutes until firm.

        Sparkle Tip:

          I use measuring strips for the perfect height and with a stainless steel rolling pin. I have not tried this dandy looking  thing, but it looks easy to use.

          Baking

          • 1. Position oven racks in the lower thirds of the oven and preheat to 350° F.
          • 2. Remove the chilled cookies from the refrigerator and bake switching the pans 1/2 way through for 12 to 14 minutes. The Cut-Out Sugar Cookies are done when they are slightly puffed and a light golden in color. Remove the cookies from the oven and leave them on the cookies sheets for 5 minutes to cool. Move the still warm cookies to a cookie rack to cool completely before icing them.

          All ovens are different in baking times. Keep an eye on your sugar cookies! They are ready to come out of the oven when they are just puffed and are on the verge of browning on the bottoms. This ensures a soft cookie and is the secret to keeping them delicious in a container for a few days.
