Whether a single shrimp dipped in cocktail sauce served in a shot glass or a shrimp taking a dive in a savory bloody mary mix, it can take on either definition. I like to serve these as my guests arrive.

IS VODKA OR TEQUILA BETTER IN A BLOODY MARY?

Vodka shows up in a bloody mary with a mild almost lost flavor. Whereas, tequila comes in with a hello check me out bang. It is a matter of preference. Both are delicious!

  • 6 large cocktail shrimp, boiled, deveined, shell left only on tail
  • 1 1/2 cups bloody mary mixer, chilled (I prefer Zing Zang.)
  • 1/4 cup vodka or tequila
  • 5 tablespoons cocktail sauce
  • 3 tablespoons hot sauce
  • 1 tablespoon black pepper
  • 1 teaspoon salt
  • 6 lemon slices
  • chives, whole stems clipped to fit glasses

I kept this simple for the party I had in mind, but you could get super fancy with the garnishing. How about…

MIXOLOGY

Step One

Spicy Homemade Cocktail Sauce

Why it’s Called Cocktail Sauce?

The origins of the name are unclear, but I found this from The Saucy Bits from Simply West Coast,

“Although people have been combining fish with spicy sauces since ancient times, the “shrimp cocktail”, as we know it today, belongs to the late 19th/early 20th century. A survey of American cookbooks confirms the combination of shellfish (most typically oysters) and a spicy tomato-based sauce (usually ketchup spiced with horseradish, tabasco, and cayenne) served in tiny cups as appetizers was extremely popular in the early part of the 20th century.

Incidentally, “cocktail” appetizers (think fruit cocktail, shrimp cocktail) were extremely popular during the 1920s, the decade of Prohibition. In the 1920s, these appetizers were actually served in “cocktail glasses” originally meant to hold alcoholic beverages. It was a creative way to use the stemware!”

THE DIFFERENCE BETWEEN SLAW AND COLESLAW

COLESLAW

Coleslaw is primarily cabbage or a variety of cabbages like Napa, red, savoy, or bok choy.

SLAW

Slaw without the cole can feature any crunchy vegetable or fruit in place of the cabbage. Broccoli, carrots, green apples, and jicama to name only a few.

Tangy Green Apple Citrus Slaw

Ingredients

Slaw

  • 3 medium green apples, peeled or unpeeled and sliced into thin strips
  • 1 orange, peeled and cut into bite size pieces
  • 1 grapefruit, peeled and cut into bite size pieces
  • 2 cups red cabbage, shredded thin
  • 4 green onions, diced thin
  • 3/4 cups italian parsley, chopped

Dressing

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon raw honey
  • 1 dash sea salt
  • 1 dash black pepper

Garnish

  • sesame seeds
  • green apple slice
  • sprig of parsley

Instructions

Whisk together all of the dressing ingredients to combine. Set aside.

Toss all of the prepared slaw ingredients in a medium bowl and drizzle on the prepared dressing. Continue to toss until slaw is coated.

How To Make The Best Sweet Tea Sangria

Ingredients

  • 1 750-ml. white wine ( I am using a Starborough Sauvignon Blanc from New Zealand)
  • 6 cups sweet tea
  • 1 /4 cup Triple sec.
  • 3 medium fresh peaches, sliced
  • 1 cup fresh blueberries
  • 1 fresh green apple, sliced, chunks
  • 5 fresh strawberries, sliced in half
  • 3 basil leaves, whole
  • fresh mint sprig for garnish
Fruit for Sangria

Mixology | Instructions

In a large pitcher add the wine, sweet tea, triple sec, fresh peaches, blueberries, green apples, strawberries, and basil leaves. Give it a good stir and put it in the refrigerator until chilled.

Fill a glass 1/2 full with ice. Pour the Best Sweet Tea Sangria over the ice letting some of the fruit fall into the glass.

Garnish with fresh mint and serve.

How To Decorate A Cinco de Mayo Tablescape

TABLE BASE

I used two pieces of pine wood for this table base. Any wooden table base will work with all of this fun color. If you have a painted table, depending on the color you might want to add a tablecloth.

THE PLACE SETTING

First, you should know I had a ton of fun mixing random pieces for this place setting. I love color and have lots of it on my entertaining storage shelves. It was a lot like changing your outfit several times and not hanging things back up behind yourself. Great, not so great, or a beautiful mess? I had a mixture of these emotions when it was time to tidy up.

*I have had the orange salad plates and the cactus margarita glasses for awhile. The link above is a bright and fun plastic plate and a margarita glass with a cactus stem. A long line of colorful flowers and confetti streaming down the center of the table screams “There is a party right here.” I used both live, paper, and tule homemade flowers finished with confetti sprinkles.

I picked these up at the local grocery store. They are easy to find in the spring. Trader Joe’s is a sure fire bet. Yellow carnations, daisies, tulips, or roses would be lovely too.

How to Decorate a Cinco de Mayo Tablescape
Green TULLE Pom Pom Flowers

I keep tulle on hand year round. I pick it up at Hobby Lobby and WalMart when it is on sale.

HOW TO MAKE TULLE POM POM FLOWERS

First, cut a 6 inch piece of tulle and set aside. Drop the roll in the floor and hold the starting end of the tulle 6 inches from the end. Make a 4″ loop securing with your fingers to the left then to the right. Repeat creating 8 to 10 loops on each side (16 to 20 loops). Cut the tulle from the roll. Next, use the 6″ piece of tulle to tie the loops in the middle. Holding the loops tightly making a fist, trim off the loops. Let them go and trim thiem a bit more into a dome. Lastly, fluff away!

Cut 8 pieces of tissue paper into 8″ X 8″ squares and place the tissue on top of each other. (I cut all 8 pieces at once.) Fold the pile in half to crease then unfold. Cut 1/4″ lines 1″ from center crease from both directions. With an uncut edge towards you, accordion fold the tissue paper. Next, fold in half and twist uncut end. Secure with wire. Lastly, fluff into a pom pom flower.

When I was a little girl, every summer we took a day trip to an amusement park called 6 Flags Over Georgia. One summer, to my amazement (Insert the dramatic music here.) I spotted the most beautiful sea of large paper flowers. …Every color in the rainbow! My mother had given me a twenty-dollar allowance for the day and my dream of cotton candy on a stick and a frozen lemonade faded fast. I took a flower home. SMILING!

Cinco De Mayo is around the corner, and these are the perfect decor. You can use them on a tablescape, hang them from trees or perhaps even a chandelier. Grab your scissors and a pack of colorful crepe paper from the local craft store and let me show you how easy these are to make.

…and for a lot less than the twenty dollars I handed over on that hot Georgia summer day.

Supplies

Instructions

1. Lay each piece of crepe paper flat with the papers natural horizontal lines facing towards you.

2. Fold each of the pieces of crepe paper into an accordion. The folds should measure between 2-3 inches.

3. Bind each piece with a binder clip and organize the folded strips into an even row.

4. Working with the outer color first, gradually trim down the length of each sheet in 1-2 inch increments to give the finished flower depth.

5. Using sharp scissors, trim the ends into rounded and pointy shapes.

Note: Don’t worry about the cuts being perfect. It will add character to the flowers.

6. Cut along the folds of each bundle all the way to the binder clip, leaving the center uncut. Repeat the same steps on all four sides.

7. Remove the binder clips from each bundle and lay the sheets on top of each other with the largest outer color on the  bottom and the smallest innermost color on top centering as you go.

8. Press the stack flat and fold all the layers into an accordion.

9. Secure with wire and gently pull layers outward.

10. Starting with the shortest cuts, carefully pull each petal upward and fan out the folds. Use your thumbs to pull lines in create paper just a bit to add form.

THE BEST PART! TIME TO STRETCH AND FLUFF!

11. Gently peel forward one strip at a time using both hands, stretch the paper open. Continue to  peel each layer forward. The flower will begin to take shape as you go.

12. Once all the petals are pulled apart, trim, fluff, and poof to perfection.

  • 1 box Betty Crocker Fudge Brownie Mix or 3 cups of your favorite powdered brownie mix
  • 2 tablespoons espresso powder
  • 2 tablespoons 100% cocoa powder
  • 2 eggs
  • 1/3 cup canola oil
  • 3 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips or chocolate chunks
  • 1 tablespoon red pepper flakes, crushed
  • 1 cup chopped pecans (optional)

Directions

Preheat oven 350° F.

Line a baking sheet with parchment paper. Set aside.

Add all of the ingredients into a large mixing bowl and stir until combined.

Pecans in Chocolate Cookie Dough

Use an ice cream scoop, to dollop mounds fo the cookie dough to the prepared pan.

Chocolate Cookie Dough

Wet the bottom of a glass and press each mound with gentle pressure. The goal is to flatten just to disc form.

Bake the cookies for 13 to 17 minutes.

Cool on a baking rack.

Store in an airtight container for up to 7 days.

Spicy Fun-Feta Corn Salad

Ingredients

  • 5 ears of corn, husk and silk removed/washed (substitute frozen corn)
  • 1 large avocado, cubed and tossed in lemon juice
  • 1 cup feta crumbles
  • 8 cherry tomatoes cut into halves
  • 3 shishito peppers, sliced thin (or 1 jalapeno sliced thin)
  • 1 tablespoon red chilli pepper flakes
  • 4 tablespoons salted butter, melted
  • 2 tablespoons fresh lime juice

Directions

1. Prepare a large bowl of ice water and set aside.

2. Fill a large pot with water and bring to a rolling boil.  Add the ears of corn and cook for 4 minutes.

3. Move the corn from the hot water to the ice water bath quickly and carefully. Remove the corn, pat dry with a clean paper towel.

4.Using a knife, remove the corn kernels from the cob and add to a serving bowl.

5. Gently toss in the avocado, feta crumbles, cherry tomatoes, and the shishito peppers.

6. In a small bowl, mix the melted salted butter, red pepper flakes, and lime juice.

7. Drizzle over the corn and toss again gently.

This is an oldie but a goodie that I pulled from my recipe box for a 4th of July picnic. You may recognize the ingredients using oyster crackers verses whole saltines. It really is fantastic on any salty cracker you choose.

How To Make Spicy Saltine Fire Crackers

How To Make Spicy Saltine Fire Crackers

Ingredients

  • 2 sleeves saltine crackers
  • 1/2 cup olive oil
  • 1 package ranch dressing mix ( Italian Dressing Mix is Fantastic TOO!)
  • 2 tbsp of Crushed Red Pepper Flakes

Instructions

Preheat the oven to 200 degrees F°.

In a large mixing bowl gently add two sleeves of saltines. be careful not to break the crackers.

Using a measuring cup, mix the ranch dressing powder, red pepper flakes, and olive oil thoroughly. Get out all the lumps. Slowly drizzle the oil mixture over the crackers and gently toss without breaking the crackers.

Line a baking sheet with parchment paper and spread the crackers on top. Bake the crackers for 45 minutes. Remove from the oven and completely cool on a cookie rack. Serve right away or store in an airtight container or a ziplock for up to three weeks.

Homemade Flower Power Lollipops

You may have guessed that I do love edible flowers. They are fun to eat and they make food pretty. Today I am sharing a simple sucker recipe perfect for a summer party take-away or a sweet treat. I keep a few in my purse to share with random people I meet in a day. They always bring a smile.

INGREDIENTS

2/3 cup white sugar
1 cup light corn syrup
1 teaspoon “clear” vanilla  extract (optional)
edible flowers
lollipop sticks
hard candy mold
clean pastry brush & a small bowl of water

Directions

SPARKLE TIP! Caramelized sugar waits for no one! Avoid skipping the following directions.

1. Fill a large bowl with ice and water. Set aside.

2. Add an edible flower or petals and a lollipop stick to each of the hard candy molds.

3. Add the sugar, clear vanilla, and the corn syrup to a small saucepan set over medium heat. Attach the candy thermometer to the interior of the saucepan.

4. Increase the heat to medium-high to bring the mixture to a boil, stirring until the sugar has dissolved.

5. Using the small pastry brush dipped in water, brush the sides of the saucepan to prevent crystals from forming.

6. Boil the mixture for 5 to 8 minutes until it reaches 300ºF (hard-crack stage) on the candy thermometer.

7. When the mixture reaches 300ºF (hard-crack stage), immediately dip the base of the saucepan into the bowl of ice water. Avoid letting water seep into the pan. Carefully swirl the pan for 3 seconds.

9. Working quickly, pour the syrup into the hard candy lollipop molds.

10. Cool and let dry completely.

11. Remove the lollipops from the molds and package them.

Air Fryer Honey Lime Drizzled Coconut Shrimp

I cannot stop with the new air fryer.  Last night I created this quick and easy recipe. I made half in the air fryer and half in the oven. Cooked both ways, this is a great recipe for your summer dinner rotation.

Let’s take a few shrimps for a coconut dip!

Honey Lime Drizzled Coconut Shrimp

Ingredients

3/4 cup all-purpose flour
1 teaspoons black pepper
3 large eggs
1 cup coconut, flaked and unsweetened
3/4 cup panko (Japanese Bread Crumbs)
24 medium shrimp, tail-on, raw, and detained
cooking spray
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup honey
lime wedges

Instructions

Whisk together the flour, pepper, and the salt in a small bowl

Lightly beat the eggs in a small dish with a fork.

Toss together the panko crumbs and the coconut.

Time to go for a dip little shrimpy!

Holding the shrimp by the tail…

  • Dip the shrimp in the flour mixture and give it a shake.
  • Then a quick dip in the egg wash.
  • Next a dip into the panko and coconut mixture. Give it a good press.
  • Finally a quick spurt of cooking spray.

Place half of the shrimp in air fryer basket, and cook at 400°F for 3 minutes. Flip the shrimp and cook another 4 minutes.

OR

Place the shrimp on a baking sheet lined with parchment and place them in a 400°F on the top rack. Cook them for two minutes, flip them, and cook for two more minutes.

Season with salt and pepper.

Repeat with the remaining shrimp.

Give the shrimp a drizzle of honey  and a quick squeeze of lime just before serving.

It will be hard not to eat them while the others cook. BE STRONG! SMILE!

The Best Razzle Dazzle Raspberry Margarita

Ingredients

FOR THE MARGARITA

  • 3/4 cup fresh raspberries
  • 2 large lime, juiced
  • 2 tablespoons agave nectar or honey
  • 1 ounce, orange liqueur
  • 1 ½ ounces Dos Primos tequila (Buy Near You or Order Online)
  • 4 ice cubes

For the Rim and Garnish

  • 1 teaspoon sugar
  • sprinkle of cinnamon
  • 1 teaspoon sea salt
  • 1 teaspoon lime zest
  • 1/2 teaspoon agave nectar or honey
  • 3 raspberries
  • lime wedge
  • orange peel
Razzle Dazzle Raspberry Margarita

Mixology

1. In a small bowel, add the sugar, sea salt, cinnamon, and the lime zest and mix with a fork.

2. Using a paper towel coated with a touch of honey or agave, rub the rim of the glass.

3. Roll the rim of the glass with in the sugar, sea salt mixture and set aside.

4. Add the lime juice, agave nectar, and the fresh raspberries to a cocktail shaker and muddle for about 20 seconds.

5.  Add in the orange liquor, tequila and a few ice cubes to the shaker.

6. Place the lid on the shaker and make the magic happen. Shake for about 30 seconds.

7. Pour into the rimmed glass.

8. Add a lime wedge and a raspberry to garnish!

Zesty Chili Lime Steak Tacos

Zesty Chili Lime Steak Tacos

INGREDIENTS:

1 1/2 pound tenderloin steak
2 large limes, juiced
1 large lime, zested
2 limes, wedged
2 teaspoons kosher salt
1/2 teaspoon black pepper
1 teaspoon brown sugar
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/8 teaspoon ground cinnamon
olive oil
corn tortillas
1/2 red onion, chopped
1 large avocado, sliced
1/3 cup queso fresco
cilantro, chopped

Zesty Chili Lime Steak Tacos

DIRECTIONS:

1. Place the  steak on a plate. Pour lime juice over the steak and let marinate for 45 minutes at room temperature.

2. In a small bowl, combine lime zest, salt, brown sugar, pepper, chili powder, cumin, paprika, garlic powder, and cinnamon.

3. Rub both sides of the steak with the spice mixture, pressing with your fingers to help the rub adhere to the meat.

4.  Preheat grill to high heat. When heated, place the steak/s directly on the grill and cook for 5 minutes on each side. Remove from grill and place steak/s on a cutting board covered with foil for 10 minutes to rest.

5. Warm the corn tortillas on the grill.

6. Slice the steak into strips, against the grain.

BUILD YOUR TACOS! YAY!

Place steak strips in the corn tortillas and top with red onion, avocado, cilantro, and queso fresco. Squeeze with lime juice, if desired.

Serve warm.

1/8 teaspoon ground cinnamon

Pink Orange Granita with a Splash of Tequila

These fluffy little refreshing flecks of PINK ORANGE YUM will melt in your mouth. Served in a pretty glass with a drizzle or tequila or without, this is a cloud pleaser!

Sparkle Notes: Pink Oranges, also known as Cara Cara Oranges have a rosy-pinkish flesh to deep red depending on the fruit.  They are low in acid and quite sweet and juicy.  Their season is limited from December to March-April so grab a bag while you can. I found them at Trader Joe’s. PS They are great in a salad too!

Pink Orange Granita with a Splash of Tequila

Pink Orange Granita with a Splash of Tequila




1 teaspoon black pepper
1 teaspoon ground clove
4 pink orange slices, garnish

Tequila, optional

Directions

  1. Squeeze 6 to 8 pink oranges to yield 3 cups of juice.
  2. In a small saucepan, combine 1/4 cup pink orange juice, the black pepper, ground clove, and 1/2 cup sugar.
  3. Boil over high heat, stirring, until sugar dissolves, about 1 minute.
  4. Transfer mixture to a shallow 2-quart dish, and add remaining pink orange juice.
  5. Freeze, scraping around sides and breaking into crystals with a fork every 30 minutes for 3 hours  or until completely frozen. Pink Orange Granita with a Splash of Tequila
  6. Cover with plastic wrap and keep in freezer until ready to serve.

Spoon into a pretty glass and garnish with a slice of pink orange.

Oh So Pretty! Floral Confetti Ice Cubes

Supplies

edible flowers
Note: I picked these up at a local grocery store. I don’t recommend eating these from your garden.

How to Make Pickled Avocados

Living in the PNW there is no shortage of wonderful foods to try. With the famous Pike’s Place Market, fresh seafood, and locally grown everything, this place has a never ending list of interesting things to try. Recently I had a piece of pickled avocado on a street taco in Seattle.

…IT WAS AHHHH-MAZING! I bought another taco just for the avocado.

I made a note of the experience in my “Sparkle Book” (brainstorm notebook) as something to attempt making for Sparkling Charm. Well, I got on it like blue bonnet because I could not stop thinking about them. I have decided the recipe is ready to share with you.

If you are an avocado lover you must give these a try.

This recipe is dedicated to the lovely Carla Bullimore. My dear friend and summer pickling buddy.

How To Eat Pickled Avocados

Eat them alongside a cheeseburger, on a hamburger, on toast, on tacos, on a BLAT sandwich, on salads, OR Right Out Of The Jar.

They are also a Show-Stopping Garnish On A Bloody Mary!

How To Make Pickled Avocados

Ingredients

2 medium avocados, just ripe but not soft
1 small white onion
2 cups white vinegar
1/2 cup water
4 tablespoons sugar
1 tablespoon kosher salt
4 tablespoons pickling spice

Directions

Combine the vinegar, water, sugar, salt, and pickling spice in a small saucepan and bring to a boil. Stir to dissolve the salt and sugar. Remove the pan from the heat and let the mixture cool to room temperature.

Halve, pit, and peel the avocados, then cut them into 1/4″ thick slices.

Peel and slice the onion into 1/4″ thick wedges.

Place the avocado and onion slices into a pint-size glass jar.

Pour the cooled brine into the jar and cover.

Gently turn the jar upside down and then upright again to distribute the brine evenly.

Refrigerate for 2 hours.

The pickled avocado slices will keep, tightly sealed in the refrigerator, for up to 1 week.

  • Peel and slice the onion into 1/4" thick wedges.
  • Place the avocado and onion slices into a pint-size glass jar.
  • Pour the cooled brine into the jar and cover.
  • Gently turn the jar upside down and then upright again to distribute the brine evenly.
  • 9.  Refrigerate for 2 hours.
  • The pickled avocado slices will keep, tightly sealed in the refrigerator, for up to 1 week.
