Cold Sweet Tea Cupcakes with Lemon Sweet Tea Buttercream

Ingredients

Sweet Tea Cupcakes

  • 1 cup whole milk, warmed just to the point of boiling
  • 12 tablespoons loose black tea
  • 2 cups cake flour, sifted
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1/2 cup canola oil
  • 2 tablespoons sour cream
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature

Lemon Sweet Tea Buttercream

  • 1/2 stick unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 3 cups confectioners’ sugar
  • 1/4 cup of milk, warmed to the point of boiling (ACCOUNTED FOR ABOVE)
  • zest of 2 fresh lemons

Garnishes

Instructions

Sweet Tea Cupcakes

Preheat the oven to 350° F. and line a cupcake pan with cupcake liners

Cupcake Tip

Add a little bit of rice to the bottom of each cupcake well to avoid greasy liners once baked. The rice will absorb some of the oil.

Cupcake Tip

First, bring the milk just to a boil in medium saucepan, turn off the heat and remove from the eye of the stove. Add the loose tea leaves and give them a stir. Steep for 15 minutes. Using a fine mesh strainer, strain the liquid into a bowl. 

Second, sift the flour, baking soda, and salt. Set aside. Add the sugar, oil, and vanilla to the bowl of a stand mixer and beat for 30 seconds. Mix in the sour cream. Next, mix in the eggs one at a time. Alternate adding the flour and 3/4 cup tea milk until just combined. Avoid over mixing.

Third, fill the cupcake wells evenly 3/4 full and bake for 15 minutes.

Rotate the pan and continue to bake for 5 to 8 minutes or until the cupcakes are golden brown. Remove from the oven and place the cupcake pan and cool on a baking rack

Hot Sweet Tea Cupcakes

Lemon Sweet Tea Buttercream

Add the butter, cream cheese, lemon zest, and confectioners’ sugar into a mixing bowl. Add 3 tablespoons of the 1/4 cup remaining tea milk and beat with a hand mixer until smooth and fluffy.

The Fun Part

Swirl big dollops of the Lemon Sweet Tea Frosting onto the tops of the Sweet Tea Cupcakes and swirl with the back of a spoon.

Garnish with a sprinkle of sanding sugar, lemon zest, a straw (or a candy stick), and a lemon slice (or a candied lemon slice”.

Georgia Sweet Tea Bourbon Slush

Ingredients

  • 4 large tea bags for 4 cups STRONG HOT brewed unsweet ice tea
  • 2 cups white sugar
  • 2 1/2 cups bourbon
  • 8 cups water, cold
  • 24 ounces frozen lemonade concentrate, thawed
  • 12 ounces frozen orange juice concentrate, thawed
Georgia Sweet Tea Bourbon Slush

Mixology | Instructions

1. STRONG TEA: Bring 4 1/4 cups water to a rolling boil. Turn heat off. Add 4 large tea bags and cover with a lid for EXACTLY 5 minutes. Remove tea bags. Measure out 4 cups for this recipe. 

2. Add the white sugar to a large mixing bowl. Pour in the hot tea and stir to dissolve the sugar.

How To Make Georgia Sweet Tea Bourbon Slush.

3. Stir in the bourbon, lemonade concentrate, and orange juice concentrate.

Making Bourbon Slush

4. Pour in the water and continue to stir until well mixed.

5. Place in the freezer for 8 hours. Remove and give it a stir.

6. Return to the freezer and continue to freeze for 2 more hours.

7. Take the Georgia Sweet Tea Bourbon Slush out of the freezer 30 minutes before serving.

8. Scoop into a pretty glass or a punch bowl.

  • 2 ounces of good vodka or gin if you prefer
  • 2 ounces of pineapple juice
  • 1 ounce fresh squeezed lemon juice
  • splash grenadine

Azalea Cocktail Garnish Ideas

Mixology | Instructions

Combine the vodka or gin, pineapple juice, lemon juice, and grenadine in a large glass or a mixing pitcher with ice and stir. Strain the mixture into an ice filled glass. (I used this fun round golf ball ice mold.) Garnish with a lemon wedge, a mint sprig and cherries.

Old Fashioned Egg Salad Sandwiches

History and Origin of the Egg Salad Sandwich

The egg salad sandwich was invented in 1762 shortly after the invention of mayonnaise in 1756. Therefore, eggs were easy to get and inexpensive. A genius mixed the two together, and served it on fresh baked bread. Alast, a show-stopper that has stood the test of time.

In addition, one of the earliest known printed recipes for egg salad for the egg salad sandwich was published in the 1896 edition of the Boston Cooking-School Cook Book written by Fannie Farmer.

Are Egg Salad Sandwiches Healthy

Eggs have high levels of protein,lutein, choline, and B vitamins. Secondly, eggs help prevent breast cancer and macular degeneration while keeping hearts healthy.

Sparkle Tip: Swap the mayonnaise for whole greek yogurt. Fage is a fantastic choice and is easily found in most grocery stores. Swap the bread for lettuce!

How Many Eggs Are In An Egg Salad Sandwich?

This recipe makes 5 to 6 sandwiches and I used 10 eggs. Therefore, there are two eggs give or take in each egg salad sandwich.

The pimento cheese sandwiches aren’t the only star of the show at the famous Masters golf tournament in Augusta, Georgia. Likewise, served in thin green plastic bags by the hundreds, the egg salad sandwich stands hand in hand with delicious pimento cheese served between two slices of white bread. Would you believe both go for $1.50 each. Likewise, this price certainly supports my love for Egg Salad Sandwiches.

A Few Easy Steps

  • Place eggs in a saucepan and cover with cold water.
  • Bring the water to a rolling boil and immediately turn off the heat. Cover and let the eggs sit for exactly 15 minutes.
  • Remove the eggs to a bowl and allow to rest for exactly 2 minutes. Crack the eggs on each side and roll them back and forth with your hand to break up the shell. Remove the shell.

Egg Salad Sandwich Ingredients

  • 10 fresh hard boiled eggs, peeled, cooled, yolks and whites separated, egg whites chopped
  • 1/2 cup Duke’s mayonnaise 1 teaspoon yellow
  • 2 teaspoon yellow mustard
  • 1 teaspoon fresh dill, minced
  • 3/4 teaspoon fresh cracked black pepper
  • 1 teaspoon salt, then to taste
  • fresh lettuce leaves, washed and dried
  • 10 slices fresh white bread, crusts removed

Egg Salad Instructions

1. Add the boiled egg yolks, mayonnaise, and mustard into a medium bowl and mash with a fork until smooth. Mix in the chopped egg whites, dill, pepper, and salt.

2. Between two pieces of bread, add a layer of lettuce, a big dollop of egg salad, and another layer of lettuce.

A Healthy Twist

  • Substitute the mayonnaise with greek yogurt.
  • Use lettuce as wraps instead of bread.
  • Use less yolks to taste.

How To Make The Masters Famous Green Jacket Salad

One of my favorite memories besides the scenery, seeing Jack Nicklaus, and sipping on an Azalea Cocktail in the April sunshine was the crisp and tangy crunchy bite of the Masters Famous Green Jacket Salad from the Green Jacket Restaurant. Yes! This simple un-fancy salad made an unforgettable impression on me.

I found the original recipe in my Junior League of Augusta Georgia’s cookbook, Par 3 Tea-time at the Masters. (You can purchase these from the Junior League of Augusta’s website here. Or on Amazon here.) Junior League Cookbooks are always filled with wonderful recipes! Treat yourself to one.

Today I am sharing my version, “How to Make The Masters Famous Green Jacket Salad” for dinner tonight!

What Is The Masters Golf Tournament?

Many consider the Masters golf tournament the most prestigious golf tournament in the world. Every year fans from all over the world head to Augusta, Georgia to the National Golf Club to watch top golf professionals play golf and battle for the prize of the coveted green jacket.

What does Salad Have to Do With a Green Jacket Anyway?

Made by the Brooks Uniform Company, this coveted jacket earned and worn by winners of The Masters Golf Tournament is said to be worth $30,000. It is so special it even has a salad named after it.

The Green Jacket Restaurant

Loved by golfers and golf fans, the Green Jacket Restaurant in Augusta, Georgia was originally located across the street from the Augusta, National Golf Club. Opened in the 70’s, it sadly closed in the mid 90’s. It was known for The Green Jacket Salad served with a Prime Rib. Rumor has it that Green Jacket Augusta Ga. LLC may bring it back in the original cities where the brand is still alive (Augusta, Athens, and Macon).

The Green Jacket Salad is delightful served with, steak, chicken, soup, and sandwiches. I sometimes toss this together for a quick lunch all by itself.

How To Make The Masters Famous Green Jacket Salad

Ingredients

Famous Green Jacket Salad Dressing

  • 1/2 cup olive oil (It is rumored that the original recipe used Wesson Soybean Oil.)
  • 1/3 cup red wine vinegar
  • 1 1/2 teaspoons Lawry’s seasoned salt
  • 1 teaspoon dried oregano, crushed to release flavor

Note: The original salad called for Shoney’s Big Boy Seasoning. Though the restaurants have since closed, you can still purchase it here. Simply replace the Lawry’s for this seasoning in the recipe.

Famous Green Jacket Salad Mix

  • 3 heads of romaine lettuce or 2 small heads iceberg lettuce, chopped
  • 1 1/2 cups red cherry tomatoes, sliced into halves
  • 3/4 cup green onions, roots removed and chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh parmesan cheese, grated
  • 1 cup pita chips, broken into bite sized pieces
  • black pepper to taste

Instructions

1. Whisk together the olive oil, red wine vinegar, seasoned salt, and oregano in a small bowl until well combined.

2. Toss the lettuce, tomatoes, parsley, green onions, and parmesan in a salad bowl. Just before serving, give the Green Jacket Dressing another stir and drizzle onto the Green Jacket Salad. Add the pita chips and gently toss to coat.

Prepare to give yourself a pat on the back of your imaginary green jacket! Your guests are about to rave over this Masters Favorite Green Jacket Salad!

You can also accessorize a multitude of ways just like a little black dress. Whipped cream, raspberries, blackberries, strawberries, peaches all give my pound cake a little extra fancy.

HOW TO MAKE A POUND CAKE: COMMON QUESTIONS

WHY IS IT CALLED POUND CAKE?

Pound cakes date back to the 1700’s and gets the name because of how it is made. Originally, the recipe called for one pound of butter, one pound of sugar, and one pound of eggs.

WHAT DOES ADDING SOUR CREAM TO A POUND CAKE DO?

.Because of the high fat content and acidity, sour cream adds moisture without thinning the cake batter, adds creaminess, controls browning, and helps to activate the baking soda.

WHY SHOULD I USE CAKE FLOUR VERSUS ALL-PURPOSE FLOUR IN A POUND CAKE?

Cake flour is lighter than all-purpose flour. Therefore, it makes a less dense cake.

WHY DO YOU WHIP THE EGGS IN A POUND CAKE?

Egg whites helps the cake to rise and creates great volume! Secondly, the egg whites create a beautiful crispy cracked crust.

Old Fashioned Melt In Your Mouth Sour Cream Pound Cake! NO FAIL!

Old Fashioned Melt In Your Mouth Sour Cream Pound Cake

Ingredients

  • 1 cup unsalted butter, softened
  • 3 cups granulated sugar
  • 6 fresh eggs, yolks and whites separated
  • 3 cups cake flour
  • 1 cup whole sour cream
  • 1/4 teaspoon baking soda
  • pinch salt
  • 1 teaspoon pure vanilla extract

TOOLS YOU’LL NEED

Instructions

Preheat the oven to 300° F. Grease and flour a bundt cake pan.

Using a stand mixer or a hand mixer, cream the butter and the sugar at medium speed. Next, add the egg yolks and vanilla and continue to mix until light and fluffy.

Whisk together the flour, salt and the baking soda together in a bowl. Add to sugar and butter mixture a little at a time. Next, add the sour cream and mix until combined.

In a separate mixing bowl, beat the egg whites to stiff peaks. Fold the fluffy egg whites into the batter.

Pour the Old Fashioned Melt In Your Mouth Sour Cream Pound Cake batter into the prepared bundt pan.

Bake for 1 1/2 hours. Insert a skewer into the hot cake and pull out gently. It is done if it comes out clean. Continue baking until the skewer comes out clean. Remove the Old Fashioned Melt In Your Mouth Sour Cream Pound Cake from the oven and place on a cooling rack for 15 minutes. Invert the cake onto a pretty cake stand or cake plate.

Even if you don’t live in an area with azaleas in bloom, I have you covered with a faux azalea blooms link. Let’s Get this Masters Tournament par-tee started!

Tablecloth – A Faux Grass Covering

This tablescape is inspired by the pristine grass at the National Golf Club in Augusta, Georgia. I used this Grizzly Grass Carpet from Lowe’s. I purchased the least amount required from the roll to fit the length and width of my table. It was less than a dollar per square foot. I will have enough left over to cut six placemats for a future tablescape. Perhaps for Easter, a Picnic, a BBQ, Tailgating, or a Kentucky Derby celebration?! (Note the faux grass detail in the photo below.)

Masters Golf Tournament Azalea Tablescape Blooms

Azaleas

The National Golf Club in Augusta has over 30 varieties of azaleas and thousands of bushes. I am fortunate to live in the south where azalea bushes are like fireworks in the spring. I cut these blooms from our yard. Not to worry if azaleas don’t bloom in your area or you don’t have them handy, these faux azalea stems will be just as pretty on your table. You can find them in crafts stores too.

Snowballs or Hydrangeas

Goodness me I love hydrangeas and snowball blooms! I keep hydrangeas in our home year round, as they are easy to find in most grocery stores. Snowball blooms are a treat. If you have a tree you can cut from, use them.

SHHHH! I have a little secret. I live on a golf course. Just inside the entrance to the golf club there are three snowball trees. I may or may not have snipped a few stems for this tablescape. …Just a few!

Little Luna Leaves – Hanging

These Little Luna Leaves are faux on this tablescape. They are a great to have on hand as they are perfect for fillers in live and faux arrangements.

Masters Golf Tournament Azalea Centerpiece HowTo

Prep the live azalea and hydrangea blooms with plastic bud tubes. Simply fill them with water, put the caps on, and stick the bloom stem into the tiny hole in the cap.

Next, arrange the little luna stems down the center of the table tucking them into each other creating a long line.

Lastly, tuck the prepared stems under the little luna leaves hiding the plastic bud tubes.

Note: Fresh azalea, hydrangea, and snowball stems will last in the water tubes for up to 8 hours.

I use these Catalonia placemats from Serena and Lily for many tablescapes in our home. They are well made as you can feel the quality when handling. I recommend catching these on sale. They come in sets of four.

Dinnerware

If you could have one basic white dinnerware place setting, I would hands down recommend La Porcellana Bianca Firenze. The detail is pretty and they can be used on a formal or a casual table. It is fun to mix and match them with different plates. I USE THEM ALL THE TIME! I used the dinner plate and the salad plate in this tablescape.

Flatware

The flatware pattern in this tablescape is Reed and Barton – 18th century. The simplicity of the design makes the set versatile.

I use sterling silver flatware and china most every single day. I have never understood why in the world anyone would only choose only special occasions to enjoy such lovely things.

Antique Glasses

I purchased these antique iridescent wine glasses in Georgetown at an estate sale. They aren’t terribly difficult to find in antique stores and online. Simply type, “Iridescent glasses” into your search engine and you are sure to find them. There are even options for modern reproductions.

Cheddar Cheddar Cheesy Cheese Crackers

Ingredients

4 ounces white cheddar cheese, shredded using small grate, cold
8 ounces sharp yellow cheddar cheese, shredded using small grate, cold
4 ounces Gruyère cheese, shredded using small grate, cold
2 cup all-purpose flour
8 tablespoons unsalted butter, cut into tiny cubes, cold
1 teaspoon salt
1 tablespoon white pepper
1 tablespoon cayenne pepper
8 tablespoons ice water

One of my fave kitchen things…this Rolling Pin with adjustable dough thickness rings. …or these  strips. Perfectly even dough every time!

Directions

1. Add the 3 grated/shredded cold cheeses, flour, butter cubes, salt, white pepper, and cayenne pepper, to the bowl of a food processor and pulse until the mixture resembles sand.

2. Add the ice water and pulse until the mixture comes together into a dough. Add another tablespoon if necessary.

3. Form the dough into two equal square discs.

4. Place the discs in plastic bags and chill in the refrigerator for 2 hours.

5. Preheat the oven to 350° F and line a baking sheet with parchment paper or a silicone mat.

6. Remove one dough disc from the refrigerator. Use a rolling pin and work into a rectangle equalling 1/8 inch in thickness. Cut off rough edges to finish rectangle.

7. Using a sharp knife or a pizza cutter, cut the sough into 3/4 inch squares.

8. Use a straw or a wooden skewer to poke a small hole in the center of each square.

9. Transfer the squares to the prepared baking sheet and bake for 15 minutes.

10. Cool on a cookie rack.

11. Repeat steps 6-10 with the second dough disc. You could save in the fridge for up to two weeks for a second snack, but pan one will go before they cool. SMILE!

Spicy Sweet Cheese Bites

Spicy Sweet Cheese Bites

These are perfect for any celebration served on a pretty tray or bagged up with a pretty bow for a take away gift. Of course they make a great snack for a good bing watch too.

Spicy Sweet Cheese Bites

Ingredients

All-purpose flour, for dusting
1 sheet frozen puff pastry, thawed
2 tablespoon salted butter, melted
1 cup grated cheddar cheese
1 cup grated Parmesan
1 jar sliced spicy sweet jalapeños, drained

Directions

1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.

2.  On a floured surface, unfold the puff pastry sheet. Using a rolling pin, gently roll across the surface of the pastry sheet two times.

“Gently is the key here. ….just flatten a tiny bit!

3. With the tines of a fork, poke holes in the puff pastry then brush with the melted butter.

4. Sprinkle on the cheddar and the Parmesan. Lightly press the cheese into the pastry using a rolling pen.

5. Cut the pastry into rounds using a 1 1/2-inch round cookie cutter.

6. Gently press 1 slice of jalapeños into the middle of each round.

7. Transfer to the prepared baking sheets. Sprinkle over the remaining 1/2 cup Parmesan.

8. Bake 10 minutes until the bites are golden brown and puffed.

Lemon Water Meringues

Ingredients

3/4 cups powdered sugar
4 egg whites, room temperature
1 teaspoon fresh lemon juice
1 teaspoon lemon zest
1/2 teaspoons water
dash salt
dash cream of tartar
1 tiny drop yellow food coloring

Instructions

1. In a mixing bowl, combine egg whites, lemon juice, water, salt, cream of tarter, food coloring, and powdered sugar.

2. Mix on high speed until meringue is glossy and forms stiff peaks.

3. Gently fold in lemon zest.

7. Place meringue in a pastry bag  and pipe onto a baking sheet or simply spoon them on.

8. Bake at 200 degrees for 60 to 90 minutes.

9. Cool on a baking rack.

10. Store in airtight container.

Today I am pulling an “oldie but goodie” out of my recipe box for you and adding a little twist.  Originally this heirloom family cake recipe was made with homemade moonshine. My recipe adds a flavorful spin with an AMAZING BROWN SUGAR BOURBON SYRUP made with a FANTASTIC “BSB Brown Sugar Bourbon” from Heritage Distilling Company in Gig Harbor, Washington.

Brown Sugar Bourbon Cake Recipe

Ingredients

Cooking Time: 2 Hours Serves 12

Cake

  • 1 cup butter, unsalted, softened
  • 2 1/2 cups white sugar, sifted
  • 1/2 cup brown sugar
  • 3 cups Swans Down bleached cake flour, sifted twice
  • 1/4 teaspoon baking soda
  • 6 large eggs, room temperature, yolks and whites separated
  • 8 ounces whole sour cream
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon BSB Brown Sugar Bourbon.

Brown Sugar Bourbon Syrup

  • 1/2 cup BSB Brown Sugar Bourbon
  • 1/2 cup brown sugar.

Instructions

Preheat Oven: 350°

Grease and flour a 10″ bundt pan and set aside.

Beat the softened butter at medium speed with an electric mixer for 3 minutes until pale yellow and creamy. Gradually add the white sugar and the brown sugar to the butter at medium speed for 7 minutes.

In a medium-sized bowl, sift the twice sifted Swans Down cake flour with the baking soda. Slowly add the sifted flour to the butter mixture 1 cup at a time mixing at medium speed.

Note: The batter will be thick like sugar cookie dough. 

Add the room temperature egg yolks to the batter one at a time and mix until combined.

Set the mixer to low speed and add the sour cream and the vanilla. Stop mixer the minute it is just combined. Avoid over mixing.

Note: The batter will loosen with this step.

Using a hand-held mixer in a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the batter.

Pour the batter into the prepared pan carefully.

Bake for 2 hours or until a knife comes out clean. Cool in pan on wire rack for 15 minutes. Remove from pan and cool completely on wire rack.

BSB Brown Sugar Bourbon Syrup

In a saucepan combine 1/2 cup BSB (Brown Sugar Bourbon) with 1/2 cup brown sugar and cook at medium heat until the sugar dissolves. Remove from the heat.

Spoon the Brown Sugar Bourbon Syrup over the cake.

Is Pimento Cheese A Southern Thing?

Pimento cheese is a popular southern spread or dip traditionally made with shredded cheddar, mayonaise, pimentos, and sometimes green olives. It is sometimes called the pâté of the deep south.

What is the Secret Ingredient in Pimento Cheese?

The secret ingredients in my pimento cheese is the apple cider vinegar and the cream cheese. The cream cheese adds a richness and the vinegar adds a little bite you just cannot put your finger on. Many southern people have their own versions of this delight. Paula Dean adds garlic powder to hers, Trisha Yearwood beats hers smooth in a blender, and my friend Jenny adds green olives.

How Do You Serve Pimento Cheese?

Pimento cheese is commonly served on crackers, with vegetables, crackers, soft white bread, or on hamburgers.

Pimento cheese is a creamy, cheesy, tangy, and peppery delight to the tastebuds.

Southern Pimento Cheese Recipe

Pimento Cheese Ingredients

  • 1/3 cup mayonnaise (Duke’s Mayonnaise is the BEST!)
  • 3 tablespoons cream cheese, at room temperature
  • 1 teaspoons Worcestershire sauce
  • 1 teaspoons apple cider vinegar
  • 2 tablespoons hot sauce
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 16 ounces Sharp Cheddar cheese, shredded
  • 2 (2 ounce) jars, diced pimientos, drained

Instructions

In a medium bowl, stir together first eight ingredients until smooth. Fold in the pimientos and the cheese. Cover and refrigerate for 8 hours. Stir before serving.

Serve my Southern Pimento Cheese in pepper halves and eat right away or heat them at 350 degrees for 20 minutes and serve hot.
