HOW TO SET A SEASIDE BEACH BATHING BEAUTY TABLESCAPE

INSPIRATION

The inspiration for this tablescape comes from many summer vacations spent on the beach with family on the shores of the Carolinas. Both Cherry Grove and Emerald Isle will forever leave me with a smile.

SAND

You cannot have a beachscape without sand. Simply lay a piece of plastic wrap down the center of the table and pour on the sand. It was easy to clean up and return to the jars. 😉 You can see it in the photo below.

Hobby Lobby has lovely white sand in small jars that were easy to handle. I used 2 – 1 pound jars for this tablescape. You can also order white sand here and here.

THE PLACE SETTING

PLACEMATS

Serena and Lily have the best placemats. They are a great quality and last for the ware. You can find natural and grass placemats easily presently, I do recommend buying these for the quality. I use them year round in most of my tablescapes. Tip! They do go on sale sometimes.

The inexpensive doily chargers I used are from Hobby Lobby! The pattern looks like a starfish.

PLATES

If you could have one basic white dinnerware place setting, I would hands down recommend La Porcellana Bianca Firenze. The detail is pretty and they can be used on a formal or a casual table. It is fun to mix and match them with different plates. I USE THEM ALL THE TIME! I used the dinner plate and the salad plate in this tablescape.

FLATWARE

The flatware pattern in this tablescape is Reed and Barton – 18th century. The simplicity of the design makes the set versatile.

I added a white chocolate mermaid tail to each glass and will serve a lemon cello for my Seafood Extravaganza Dinner Party.

The Best Atlantic Beach Pie With A Saltine & Graham Cracker Crust

Visiting our family beach home a couple of times a year on Emerald Isle was not complete without a slice of Bill Smith’s infamous Atlantic Beach Pie. It is one of those recipes that sticks with you and you have to learn how to make it. Well friend! Adapted slightly from Bill Smith of Crooks Corner, North Carolina I am sharing my “gilded lily” version with you.

Let’s Chat About The Best Atlantic Beach Pie

WHAT IS THE ORIGIN OF THE ATLANTIC BEACH PIE?

The original recipe by Bill Smith truly is a show stopper. You can find the neat story about the original recipe here.

A SALTINE CRACKER CRUST VERSES A GRAHAM CRACKER CRUST FOR A TART SWEET PIE YOU ASK? YES INDEED AND I USED BOTH!

Key lime pie fans insist that the graham cracker crust would be much better for this pie because the saltines go a bit soggy. In reality, the saltines add a great balance with the luscious creamy filling and add crunch!

Note some versions of this recipe call for club crackers or ritz crackers. 😉

In my recipe I use more butter and 1/2 cup of graham crackers too. It is makes for the perfect crust texture. The chilled crushed graham crackers and butter hold the crust together while the barley crushed saltine crackers add the crunch! EVERYONE WINS!

HOW TO GILD THE LILY & SERVE ATLANTIC BEACH PIE

Firstly, if you haven’t heard the term gild the lily, it means to add an extra touch to what is already perfection. I am all about the gilding of the lily. I call it Sparkling Charm! 😉

You can’t mess with Bill Smith’s pie perfection, but the fun of blogging and passing recipes is making a recipe your own by Gilding the Lily with your own spin. I chatted a bit above about what I changed in the crust ingredients and why. Now let’s talk about the Sparkle Spin! 😉

Just before serving the pie, top with fresh whipped cream. “Gild the lily – Sparkling Spin” this beauty by adding lemon and lime zest. It looks like confetti on the whipped cream and it adds an extra brightness to the flavor.

HOW TO STORE THE BEST ATLANTIC BEACH PIE

Atlantic Beach Pie is best served when it is made. The crust will be a bit softer, but you can make the pie the day before and top it with whipped cream and zest just before serving. It can be stored covered in the refrigerator for 3 days.

EGG WHITES IN THE CRUST

Southern Living calls for 1 egg white in the crust. When baked it has a noticeable baked egg flavor that for a moment blocks the delightful salty, sweet, and tangy perfection of the pie. I am pretty sure it is mixed in the crust to bind, but I found that if you press the crust well you will get the same result as a graham cracker crust that just calls for butter and sugar.

THE BEST ATLANTIC BEACH PIE WITH A SALTINE & GRAHAM CRACKER CRUST

Ingredients

Crust

  • 36 saltine crackers or 1 sleeve
  • 1/2 cup crushed graham crackers, crushed to resemble sand
  • 10 tablespoons unsalted butter, melted
  • 3 tablespoons granulated sugar

Filling

  • 1 – 14 ounce can sweetened condensed milk
  • 4 egg yolks
  • 1/4 cup fresh squeezed lemon juice
  • 1/4 cup fresh squeezed lime juice

Garnish

  • fresh whipped cream
  • coarse sea salt
  • zest of one lemon
  • zest of one lime

SHOP THIS POST

Instructions

Preheat oven 350° F.

With clean hands, crush the saltine crackers into fine pieces but not into dust/sand. Add the crushed graham crackers, sugar and the melted butter and continue to mix until the mixture holds together like dough. Press into a 8″ pie plate. Chill for 15 minutes and then bake for 18 minutes. Remove from the oven and place on a cooling rack.

While the crust is cooling, mix the the condensed milk, egg yolks, lemon juice, and lime juice until completely smooth with a whisk. (This is an important step.) Pour the mixture into the saltine crust and bake for 16 minutes. The center should be set. Remove from the oven and refrigerate until completely chilled.

Top with fresh whipped cream, sprinkle with coarse salt, and zest a lemon and a lime across the pie.

Just like the famous Lobster Roll, if it has mayonnaise it is served cold, if it is drizzled in butter it is served warm. Living in the south, I highly recommend the cold version for a summertime treat.

A few fun fact my Waterford, CT raised husband taught me…

The first lobster rolls were served in Connecticut not Maine with melted clarified butter. The major difference between Maine lobster rolls and Connecticut lobster rolls is the temperature of the meat. Maine lobster rolls have mayonnaise and finely chopped celery is served cold. Whereas, the Connecticut lobster roll is topped with warm butter and tarragon.

The Best Mini Buttery Shrimp Rolls

Ingredients

  • 1 pound medium fresh boiled unpeeled shrimp, heads removed
  • 1 celery stalk. diced
  • 1 scallion, thinly sliced 
  • 1 tablespoon fresh dill, chopped
  • 1 tablespoon lemon zest
  • 2 teaspoons fresh lemon juice
  • 3/4 cup full fat mayonnaise (AVOID MIRACLE WHIP! DUKES IF YOU CAN GET IT!)
  • 1 teaspoon horseradish
  • 1 teaspoon Old Bay seasoning
  • 1 teaspoon kosher salt
  • 1/2  teaspoon black pepper
  • 3 tablespoons salted butter
  • 8 Hawaiian rolls sliced in center 3/4 through or 4 potato hot dog buns cut in half
  • 3 tablespoons parsley, chopped
  • 5 cups kettle cook potato chips

SHOP THIS POST

Instructions

Bring a medium pot of water to a boil over high heat. Remove the water from the heat, add the shrimp, and coved for 3 minutes until bright pink. Immediately drain and let the shrimp cool for 10 minutes. Peel and devein the shrimp. Roughty cut the shrimp into bite sized pieces. Set aside.

In a mixing bowl, add the celery, scallions, dill, lemon zest, lemon juice, mayonnaise, horseradish, Old Bay seasoning, salt and pepper. Stir to combine. Fold in the shrimp to coat.

Melt the butter in a skillet over medium heat. Place the rolls cut side down in butter for 30 seconds. Flip and cook for another 30 seconds.

THE BEST RETRO CRACKERS TO SERVE WITH RETRO SHRIMP DIP

Any cracker or crusty bread works with The Ultimate Retro Shrimp Dip, but if you really want to go retro, serve it with Ruffles potato chips, saltine crackers, club crackers, or crackers.

HOW TO SERVE & STORE THE ULTIMATE RETRO SHRIMP DIP

This is a great make ahead party dip that is served chilled. It can be stored in the refrigerator for 3 days in an airtight container

How To Make The Ultimate Retro Shrimp Dip

How To Make The Ultimate Retro Shrimp Dip

Ingredients

  • 16 ounces of whole cream cheese (2 blocks)
  • 1/2 cup mayonnaise

DUKE’S if you can get it. AVOID MIRACLE WHIP! THAT IS NOT MAYONNAISE! 😉

  • 1 teaspoon lemon juice (Retro: bottled lemon juice)
  • 3 tablespoons hot sauce (Frank’s is my favorite!)
  • 1/4 teaspoon worcheshire sauce
  • 1 small white or yellow onion, grated and drained. (Squeeze with clean hands to remove juice or place between 3 paper towels and squeeze.)
  • 8 ounces canned shrimp, drained – or 2 cups roughly chopped fresh boiled shrimp, peeled and deveined
  • 1/2 cup thing sliced green onions
  • zest of 1 fresh lemon

Instructions

Step One

Using a hand mixer on medium high, cream the mayonaise and the cream cheese until completely smooth. Next on medium low speed, mix in the lemon juice, hotsauce, worcheshire sauce, grated onion. Add in the shrimp and mix until combined.

Step Two

Scoop the Retro Shrimp Dip into a bowl, Sprinkle on the lemon zest and then the green onions. Serve chilled with saltine crackers, Ritz Crackers, Club Crackers or Ruffles Potato Chips.

  • 1/4 cup vodka or tequila

  • 1 tablespoon black pepper
  • 1 teaspoon salt
  • 6 lemon slices
  • chives, whole stems clipped to fit glasses

Why it’s Called Cocktail Sauce?

The origins of the name are unclear, but I found this from The Saucy Bits from Simply West Coast,

“Although people have been combining fish with spicy sauces since ancient times, the “shrimp cocktail”, as we know it today, belongs to the late 19th/early 20th century. A survey of American cookbooks confirms the combination of shellfish (most typically oysters) and a spicy tomato-based sauce (usually ketchup spiced with horseradish, tabasco, and cayenne) served in tiny cups as appetizers was extremely popular in the early part of the 20th century.

Incidentally, “cocktail” appetizers (think fruit cocktail, shrimp cocktail) were extremely popular during the 1920s, the decade of Prohibition. In the 1920s, these appetizers were actually served in “cocktail glasses” originally meant to hold alcoholic beverages. It was a creative way to use the stemware!”

Red snapper is a lean meat with a mild, slightly sweet fish with a subtle nutty taste.

DOES RED SNAPPER HAVE A LOT OF BONES?

Red Snapper Bones

A red snapper filet has a line of bones that go from the edge of the filet to the center of the fish about half way. It is best the remove or have the bones removed before cooking.

How Do You Remove Red Snapper Bones?

If the butcher didn’t remove the bones, make a slit on each side of the fish from the edge of the filet half way down. Lift and remove the entire line at once.

Grilled Red Snapper with Green Apple Citrus Slaw

Ingredients

  • 1 pound fresh red snapper filet, de-boned
  • 2 tablespoons avocado oil
  • sliced
  • lemon and lime slices
  • 3 tablespoons salted butter
  • 3 garlic cloves, minced

Print the Recipe for Green Apple Citrus Slaw HERE!

Instructions

Prepared the fish by rinsing in cool water and patting dry with a paper towel. Set aside.

Add the butter, garlic, salt, to a melting pot and melt over low heat.

Coat the avocado oil onto a grill pan and heat to medium. Place the fish skinless side down for 4 minutes or until cooked 1/2 way to center.

Flip the fish, lay a few sliced lemons and limes on top and cook for 4 more minutes or until fish is cooked through. Turn off the heat and brush with the garlic butter and spritz with lemon and lime.

Place the fish on a bed of Tangy Green Apple Citrus Salad, mashed potatoes, or a bed of green lettuce.

Directions

Step One: Melt the White Chocolate

MiCROWAVE OVEN

Place 1/2 the chips into a microwave safe bowl. Place in the microwave on medium for 15 seconds. Remove and stir. Repeat until the white chocolate is melted. If you are using an oil based flavoring. Stir it in now.

Fit a heatsafe bowl on top of a saucepan. There should be at least 2 inches of space between the bottom of the bowl and the bottom of the pot. Remove the bowl and fill the pot with 1 inch of water and bring to a boil. Drop the temperature to the lowest heat once the water boils. Dry the bowl completely and pour the white chocolate chips or wafers in. Place the bowl carefully over the water. (The bottom of the bowl should not touch the water!) Use a rubber spatula to melt the chocolate. If you are using a flavoring oil. Stir it in now.

Tips For Melting White Chocolate

1. Avoid letting any water get into the white chocolate. Make sure the bowl is dry and pay attention to the steam if you are using a double boiler. Any water causes the chocolate to seize.

2. Keep an eye on the chocolate. It will burn quickly!

3. Avoid using liquid flavoring. It will cause the white chocolate to seize. Use a flavoring oil instead. Note! A little goes a long way.

Step Two: Fill The Mold/s

Using a spoon, fill the mold wells with the melted white chocolate to the top. It is okay to overfill a tiny bit. Run an offset spatula or the back of a knife across the mold to remove and even out overfilled wells. Place any leftover white chocolate back into the melting pot. Gently bounce the mold on the countertop to remove air bubbles. Place the mold into the refrigerator for 20 minutes.

NOTE! The bowl in the photo was for the photograph. 😉 I filled the wells directly from the heated bowl.

Step Three: Remove the White Chocolate Candy Seashells

Using your fingers, gently press the molds without denting. The white chocolate candy will pop out easily.

Step Four: Repeat

Repeat steps one through three with the rest of the white chocolate.

Step Five: Shimmer Time

Using the shimmer brush and the shimmer powder, brush on the sparkle!

Step Six: Fill The Bags

Fill the bags with five or six Shimmering White Chocolate Seashells. Tie on a ribbon.

There you have it! A lovely party favor or take-away gift your guests witl love.

THE DIFFERENCE BETWEEN SLAW AND COLESLAW

COLESLAW

Coleslaw is primarily cabbage or a variety of cabbages like Napa, red, savoy, or bok choy.

SLAW

Slaw without the cole can feature any crunchy vegetable or fruit in place of the cabbage. Broccoli, carrots, green apples, and jicama to name only a few.

Tangy Green Apple Citrus Slaw

Ingredients

Slaw

  • 3 medium green apples, peeled or unpeeled and sliced into thin strips
  • 1 orange, peeled and cut into bite size pieces
  • 1 grapefruit, peeled and cut into bite size pieces
  • 2 cups red cabbage, shredded thin
  • 4 green onions, diced thin
  • 3/4 cups italian parsley, chopped

Dressing

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon raw honey
  • 1 dash sea salt
  • 1 dash black pepper

Garnish

  • sesame seeds
  • green apple slice
  • sprig of parsley

Instructions

Whisk together all of the dressing ingredients to combine. Set aside.

Toss all of the prepared slaw ingredients in a medium bowl and drizzle on the prepared dressing. Continue to toss until slaw is coated.

SIMPLE SALMON RAINBOW BAKE!

Salmon is Good For You!

Nutrition

Did you know a 4 ounce serving of salmon is about 200 calories! It is low in saturated fats and a good source of protein. It is also the best source of vitamin B12, full of potassium and vitamin D.

Salmon or Chicken

Also note, chicken and salmon are both great sources of protein, but salmon beats chicken with it’s banging Omega-3 content.

How Often Can you Eat Salmon?

You can eat salmon or any seafood up to 4 times a week.

Simple Salmon Rainbow Bake

Ingredients

Sparkle Tip: Keep a large bowl with a lid in your refrigerator for quick vegetable snacking. We call it the “Rainbow Snack Bowl.”

Note: In this recipe I didn’t use exact measurements for all ingredients. As I decorated the pan, I added leftovers to our “Rainbow Snack Bowl.” 

  • 2-4 salmon steaks
  • asparagus
  • 5 purple potatoes, sliced thin
  • radishes, sliced thin
  • broccolini, sliced in half
  • orange, white, or purple cauliflower, sliced thin
  • grape tomatoes
  • 1 large banana pepper, sliced
  • fresh pineapple, sliced
  • 1 lemon, sliced
  • fresh dill
  • sea salt
  • ground pepper
  • 1/4 cup virgin olive oil

Instructions

Preheat oven to 450 F. Line a large sheet pan with parchment paper.

2. Place the salmon steaks onto the pan and arrange the vegetables and the pineapple around them.

3. Drizzle with olive oil and sprinkle on the salt, pepper and dill. Place a few lemon slices on the salmon. 

4. Bake for 13 to 15 minutes. Serve with lemon slices.

The Best Coconut Custard Cake

When To Serve The Best Coconut Custard Cake

This cake will gorgeous on your Thanksgiving, Friendsgiving, or Christmas dessert bar. It might even make your pecan pie cry from feeling left out. Oh! Of course it would be perfect for a coconut fans birthday or a Seafood Extravaganza!

The Best Coconut Cream Cake

Ingredients

  • 1 box white cake mix
  • 3 large eggs
  • 1 cup buttermilk
  • 1/3 cup coconut oil
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon coconut extract
  • 1 – 14 ounce bag flaked/shredded coconut, sweetened or unsweetened
  • optional for texture: 1 cup unsweetened coconut chips
  • 1 – 3 ounce box coconut custard mix (Jello)
  • 2 cups whole milk
  • 2 cups heavy cream
  • 1 cup confectioners sugar
  • 1 – 8 ounce container mascarpone cheese

Instructions

Preheat oven to 350° F. Flour and grease two 9 inch cake pans. Set aside.

Fit two round pieces of parchment paper into the bottoms of the prepared cake pans.

Prepare the coconut custard according to the package directions. (The whole milk will be used here.) Lay a piece of plastic wrap gently on top of the custard. Place the mixture in the refrigerator to set.

Add the cake mix, eggs, coconut oil, and buttermilk into a mixing bowl. Using a hand mixer, combine until smooth. Two minutes will do the trick. Pour in just 1 teaspoon of the vanilla extract and the coconut extract. At a low speed, mix for 15 more seconds. Pour the batter evenly into the prepared cake pans. Carefully place the cake pans onto the center rack of the preheated oven and bake for 30 minutes or until a toothpick comes out clean. The cakes should be golden brown.

Set the cakes on a wire rack and let them cool completely.

Add the heavy cream, confectioners’ sugar, mascarpone cheese, and remaining 1 teaspoon vanilla extract to a medium mixing bowl. Using a hand mixer, beat until until stiff peaks form.

Pick a pretty plate or cake stand and carefully turn one of the cakes onto it.

Peel the parchment paper away.

Using a fork or a wooden skewer, poke holes into the cake.

Generously spread the coconut custard onto the cake leaving a 1/2 inch space from the edge.

First Snow Dreamy Creamy Coconut Custard Cake

Give it a sprinkle of coconut.

Remove the second cake from the pan and place it rounded side down on top of that coconut cream custard.

Frosting the The Best Coconut Cake

Add a dollop of dreamy to the top of the cakes.

Or three…

Frost Away!

Sprinkle the top and sides of the cake with coconut. I added a few large shaved coconut flakes for texture.

Place in the refrigerator until ready to serve!

Oh my gosh! I am just so excited for you to take a bite! I wish we could sit down with tea and enjoy a piece together. DIVINE!

Air Fryer Honey Lime Drizzled Coconut Shrimp

I cannot stop with the new air fryer.  Last night I created this quick and easy recipe. I made half in the air fryer and half in the oven. Cooked both ways, this is a great recipe for your summer dinner rotation.

Let’s take a few shrimps for a coconut dip!

Honey Lime Drizzled Coconut Shrimp

Ingredients

3/4 cup all-purpose flour
1 teaspoons black pepper
3 large eggs
1 cup coconut, flaked and unsweetened
3/4 cup panko (Japanese Bread Crumbs)
24 medium shrimp, tail-on, raw, and detained
cooking spray
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup honey
lime wedges

Instructions

Whisk together the flour, pepper, and the salt in a small bowl

Lightly beat the eggs in a small dish with a fork.

Toss together the panko crumbs and the coconut.

Time to go for a dip little shrimpy!

Holding the shrimp by the tail…

  • Dip the shrimp in the flour mixture and give it a shake.
  • Then a quick dip in the egg wash.
  • Next a dip into the panko and coconut mixture. Give it a good press.
  • Finally a quick spurt of cooking spray.

Place half of the shrimp in air fryer basket, and cook at 400°F for 3 minutes. Flip the shrimp and cook another 4 minutes.

OR

Place the shrimp on a baking sheet lined with parchment and place them in a 400°F on the top rack. Cook them for two minutes, flip them, and cook for two more minutes.

Season with salt and pepper.

Repeat with the remaining shrimp.

Give the shrimp a drizzle of honey  and a quick squeeze of lime just before serving.

It will be hard not to eat them while the others cook. BE STRONG! SMILE!

Place the shrimp on a baking sheet lined with parchment and place them in a 400°F on the top rack. Cook them for two minutes, flip them, and cook for two more minutes.

Season with salt and pepper.

Repeat with the remaining shrimp.

Give the shrimp a drizzle of honey  and a quick squeeze of lime just before serving.

It will be hard not to eat them while the others cook. BE STRONG! SMILE!

Bite Size Southern Shrimp and Grits Appetizer

Hi Friends!

Let me tell you a little something funny. I was thinking about what to make for a party last week and decided that I was somehow going to turn “Southern Shrimp and Grits” into an appetizer. While chatting with my neighbor and dear friend Peggy about how I was planning on taking this dish served hot in a big bowl to a tiny bite sized goodie, I mentioned “Quick Cooking GRITS!” I nearly fell flat over laughing when she showed up with a Southern Cook Book stating these words, “Gwyn, no self-respecting southerner uses instant grits.”

I did turn this famous southern dish into a bite sized treat and want to share my recipe with you today.

…And guess what and bess our hearts! We are using instant grits. 😉 STILL CREAMY! STILL CHEESY, STILL DELICIOUS GOODNESS!

THE ORIGIN OF SHRIMP AND GRITS

First appearing in Charleston, South Carolina over 70 years ago, this dish was called breakfast shrimp, fishermen began their day with this delectable filling dish. Later the name evolved into “shrimp and grits” and became a star on many southern menus.

WHAT TO SERVE WITH SHRIMP AND GRITS?

They are great all by themselves, but if you want to gild the lily serve them with skillet cornbread or southern biscuits.

Bite Size Southern Shrimp and Grits Appetizer

Bite Size “Southern Shrimp and Grits” Appetizer

Ingredients

Makes 30 appetizers

  • 1 1/2 cup uncooked “quick cooking” grits “AKA INSTANT GRITS”
  • 6 cups chicken broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1 block cream cheese
  • 1/2 cup heavy cream
  • 24 medium shrimp, peeled, tails on, deveined
  • 1 tablespoon lemon juice
  • 1 tablespoon old bay Seasoning (more for garnish)
  • chives, cut into 1/2 inch stems

Instructions

1. Bring chicken broth to a boil over medium-high heat. Turn the heat to low, add in the grits, and stir occasionally until they become thick. Remove from heat and stir in salt, pepper, cream cheese, and sharp cheddar cheese. Keep warm.

2. Cook the shrimp in a nonstick skillet over medium heat until pink. Remove from heat and toss with the Old Bay Seasoning and lemon juice.

3. Pour the cream into grits and give it a stir.

4. Fill each individual dish with a heaping tablespoon of grits.

5. Add a dash of Old Bay Seasoning, a few sprigs of chives, and top with a shrimp.

Sparkle Tip! I picked tiny plastic square dishes and tiny plastic silver spoons for quick disposal since I was serving to a group of 25. I would absolutely recommend serving these in a pretty crystal cocktail cup for a smaller group and adding another spoon of grits.
