Rich and Decadent Pecan Pie Brownie Recipe

Ingredients

Brownie Layer

  • 18.4 ounce box chocolate brownie mix (The mix you pick should fill a 13X9 baking pan or dish. The boxes are usually marked Family Size.)
  • Ingredients per box directions
  • 2 tablespoons espresso powder

Pecan Pie Layer

  • 1/2 cup brown sugar
  • 1/2 cup white sugar
  • 1 1/2 cups Light Corn Syrup
  • 4 eggs
  • 1/4 cup butter, unsalted
  • 1 1/2 teaspoons vanilla extract
  • 2 cups pecans, roughly chopped

Instructions

Brownie Layer

Preheat the oven according to brownie package instructions.

Line a 13 X 9 baking pan/dish with parchment. Leave wings for removal.

Mix the brownies according to package directions adding the espresso powder into the mix. Pour the brownie mixture into the prepared pan and bake for 20 minutes. (See notes below.)

Remove the brownies from the oven after 20 minutes.

Pecan Pie Layer

Whisk together the sugar, corn syrup, eggs, butter, and vanilla in a mixing bowl. Stir in the pecans.

The Magic

Remove the brownies from the oven and gently spread the pecan mixture over the top of the brownies completely.

Place the brownies back into the oven for 25 to 30 minutes or until the filling sets. When the pan tilts the pecan pie filling should stay in place.

Remove the Pecan Pie Brownies from the oven and let them cool completely.

Cut and serve. YUM!

Italian Stuffed Turkey Breast with Tomato Gravy

Italian Stuffed Turkey Breast with Tomato Gravy Recipe

Ingredients

Stuffing

  • 1 cup bread crumbs
  • 1/2 cup mixed olives, chopped
  • 1/3 cup capers, drained
  • 3/4 parmesan cheese
  • 1/3 cup Italian parsley, chopped
  • 1/4 cup olive oil
  • 2 teaspoons salt

Turkey Breasts

  • 2 – 2.5 pound turkey breasts (With skin, boneless, butterflied and pounded slightly)
  • 6 slices swiss cheese
  • 2 cloves garlic, peeled and smashed
  • 1 cup dry white wine
  • 1- 25 ounce can tomato puree
  • 3 sprigs fresh basil

Instructions

Preheat oven to 400°F.

PREP

Add the breadcrumbs, olives, parmesan cheese, capers, parsley, 2 tablespoons of the olive oil and 1/4 teaspoon of the salt into a medium bowl and combine.

Lay the turkey breasts on a flat work surface cut side up. Season the insides with 1 teaspoon of salt. Place three slices of cheese down the center of each breast. Sprinkle the breadcrumb mixture evenly over both breasts.

Begin with the skinless end of the breast, use clean hands and roll the turkey breast up tightly. Tie the rolled up breast in three places with butcher string. Season the outsides of both breasts with the rest of the salt.

Cooking

Heat a oven proof pan over medium high heat. Add the remaining olive oil to the pan and heat another 30 seconds. Place the turkey breasts skin side down to the pan and cook, undisturbed, until there is a golden brown braise appears. This will take 4 to 5 minutes. Flip the breasts carefully, and cook an additional 3 minutes on the other side. Being careful not to lose stuffing, move the breasts to a plate.

To the pan, add the garlic and cook for 2 minutes. Drop the heat to low. Deglaze the pan with white wine and stir up the brown bits from the bottom of the pan using a wooden spoon. Bring the wine to a simmer. Stir in the tomato puree. Lay the basil across the top of the sauce. Place the breasts back in the pan and cover with lid.

Place in the oven and cook until the internal temperature reaches 145°F. This will take about 30 minutes. Uncover and cook another 15 minutes or until internal temperature reaches 160°F.

Remove from the oven, place lid back on and rest for 15 minutes before serving.

Elegant Spiced Apple Charlottes Recipe

Ingredients

Crème Patissiere

  • 2 tablespoons cornstarch
  • 1 cup milk, whole
  • 1 egg
  • 2 egg yolks
  • 6 tablespoons sugar
  • 2 tablespoons butter, unsalted
  • pinch of salt

Spiced Apples

  • 3 tablespoons water
  • 1/2 cup sugar
  • 6 granny smith apples, peeled, cored, and cut into small pieces.
  • 2 tablespoons brandy
  • 1/4 cup orange juice
  • 2 tablespoons butter, unslated

Crème Chantilly

  • 2/3 cup heavy cream
  • 2 tablespoons caster sugar
  • 1/2 teaspoon vanilla extract

Other Ingredients

  • 12 Ladyfingers, cut into halves
  • cinnamon, garnish
  • cinnamon sticks, garnish

Instructions

Crème Patissiere | Pastry Cream

Add the cornstarch, 1/4 cup of the milk into a small bowl. Beat the whole egg then the yolks into the mixture.

In a saucepan, combine the remaining milk and caster sugar and bring to a boil whisking constantly. Remove from heat.

Whisk the egg mixture constantly and slowly drizzle the warm milk into the eggs to temper. Return the remaining milk to low heat. Slowly pour the egg mixture into the milk. whisking briskly to a boil. Remove from the heat and whisk in the butter, vanilla and salt. Continue to stir until the mixture it thickens.

Pour the pastry cream into a bowl and press a sheet of plastic wrap directly on the surface to avoid a skin forming. Cool and refrigerate until ready to use.

Spiced Apples

Place the sugar and water into a saucepan and turn heat to medium. Stir with a wooden spoon until the sugar is dissolved and turns golden. Pour in the apples, brandy, orange juice, cinnamon, and butter and stir. Continue to stir for 10 minutes until the water has dissolved and the apples are tender. Turn off the heat and cool.

Crème Chantilly | Fresh Whipped Cream

Pour the heavy cream into the bowl of and whip with an electric mixer and mix until thick. Add the vanilla and sugar and continue to whip until stiff peaks form. Cover and store in the refrigerator until until ready to use.

Assembly

Line each crystal taster trifles or small bowl with 6 lady fingers. Divide and spoon in the pastry cream.

Before you start canning these tasty treats, let’s review a few facts to set you up for success. Read the info below before you get started.

What Do Apples Canned in Water Taste Like? Are they Crunchy?

They are sweet and crunchy with a rich apple flavor. I am on my third batch this season. My husband eats them right out of the jar. PS They are delicious cold.

What Kind of Apples Are Best For Canning?

Choosing the right apple variety is important for canning sliced apples and keeping the result a crisp sweet bite. Let’s save the others for delicious apple butter and apple sauce.

Apple Tips

  1. Pick an apple with a firm flesh.
  2. Choose an apple that is already naturally sweet. For example, a Granny Smith is firm but tart. Those beauties are great in a pie or covered in caramel.

Honeycrisp, Braeburn, Gala, Pink Lady, and Fuji fit the bill.

How Many Apples Do You Need For Canning?

It is truly impossible to tell you exactly how many apples you need for canning. The size, type and juiciness of the apple adds to the amount. These are my personal estimates.

  • 10 Pounds of apples = 8 pint jars of canned apple slices
  • 10 pounds of apples = 4 quart jars

There are 30 +/- medium apples in 10 pounds.

If your last jar fills a little short or a little over. No worries! Stick them in the fridge and enjoy right away.

Canning Apples In Water

In this recipe I use the water from the fruit plus two cups of filtered water. It becomes a syrup that can be used in other recipes. See below.

In a large stock pot with a lid, add all of the apples. Sprinkle with the sugar and toss until coated.

Press a piece of plastic wrap on top of the apples. Place two plates on top of the plastic wrap and cover with the pot lid. Refrigerate for 24 hours.

Water Bath Canning

Fill the water bath canning pot with enough water to cover the jars 1 inch. Hang the rack on the sides of the pot with jars and lower into the water. Bring the water to a boil. Remove the jars with canning tongs pouring scalding water back into the pot. Place jars on a towel on close by.

Add the lids and rings to and heat on low.

Remove the apples from the refrigerator. Take out the plates and remove plastic wrap. Give the apples a good stir. Add the optional lemon juice. Bring the apples to a boil and boil for exactly one minute. Turn off the heat and remove from the heat source.

Pack the apple slices into the jars leaving 1/2 inch of headspace. Remove any apples that sit above the liquid with canning tongs. Wipe the rims of the jars with a damp cloth. Place the warm lid on the jar and screw on the ring.

Hang the rack on the sides of the canning pot. With the canning tongs, slowly move the jars to the rack. Lower into the boiling water and process for 15 minutes.

Lift the rack and hang on the canning pot. Using the canning tongs, move each jar onto the counter top. AVOID moving the jars for 24 hours.

After 24 hours, Check the seals and make sure the lid has a small indented circle in the center.

Store in a cool dark place for up to one year.

Apple Syrup

  1. Add 2 tablespoons over ice, (optional: add vodka) fill with carbonated water. Stir.
  2. Add 3 tablespoons of apple syrup, 1 tablespoon apple cider vinegar, 1/2 cup olive oil, and salt to make a salad dressing.
  3. Stir in iced tea.

Moist Olive Oil Cake With Roasted Grapes Recipe

Serves 6

Ingredients

  • 1 1/4 cup all-purpose flour or cake flour
  • 2/3 cups granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2/3 cup olive oil
  • 1/2 cup greek yogurt
  • 2 large eggs, room temperature
  • 3 tablespoons lemon juice
  • 1 tablespoon lemon zest

Roasted Grapes

  • 3 cups grapes, rinsed and dry

Greed Yogurt Glaze

  • 4 tablespoons greek yogurt
  • 1 cup powdered sugar

Instructions

Cake

Preheat oven to 350° F. Grease a 9″ cake pan

Add the all-purpose flour, sugar, baking powder, baking soda, and salt into a mixing bowl and whisk to combine. Create a well in the center. Add the olive oil, eggs, and yogurt. Stir to combine. Add the lemon juice and lemon zest. Stir until there is no lumps.

Pour into the prepared pan and bake 30 to 35 minutes.

Remove from the oven and let cool in pan for 5 minutes. Invert the cake onto a cooling rack to complete cooling.

Roasted Grapes

Preheat oven to 400°F. Line a baking pan with parchment.

Scatter the grapes on the prepared pan and drizzle with olive oil.

  • 1 – 8 ounce container whole sour cream
  • 1/2 cup granulated sugar (Dixie Crystal recommended)
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar, firmly packed
  • 1 cup pecans, chopped (My favorite place to buy Georgia Pecans is The Nut House. Click here for online ordering.)

Spooky Halloween Pretzel Sticks

Makes 20 Pretzel Sticks

Ingredients

CHOCOLATE COVERED PRETZELS

  • 20 pretzel rods
  • 24 ounces white chocolate chips and/or chocolate chips

GOOGLY EYES AND SPRINKLES

SHOP GOOGLY EYES & SPRINKLES

Instructions

Prepare a baking sheet with parchment paper.

Melt the white and/or dark chocolate chips.

2 WAYS TO MELT CHOCOLATE CHIPS

ONE: Microwave

Add the chocolate chips in a heatproof microwave safe bowl. Place in the microwave and heat in 15 second intervals stirring in between each.

TWO: Stove Top

Fit a heat proof bowl into a pot. Add 2 inches of water to the pot and bring to a slow simmer. Reduce the heat to low. Place the chocolate chips in the pre-fitted bowl. The water should not touch the bowl. Stir the chocolate until melted.

Dip/coat the 3/4 of the pretzel rods/sticks in the melted chocolate.

White Chocolate Pretzels

Decorate the hot melted chocolate quickly and place on the prepared baking sheet. Let the chocolate harden. Store in an airtight container for up to two weeks.

    You will love this cheesecake with or without extracts. If you just love cheese cake the way make my easy recipe below. If you want to get fancy and fruity, my recipe has an option for a coconut center, an orange center ring, and an outer orange ring. This is a creamy and delicious crowd pleaser either way you make it.

    Best No-Bake Candy Corn Cheesecake

    Best No-Bake Candy Corn Cheesecake

    Serves 6

    Read through before beginning.

    Ingredients

    Crust

    • 3 cups graham crackers, crushed
    • 3 tablespoons sugar
    • 8 tablespoons unsalted butter, melted

    Filling

    Optional Flavoring

    • 1/4 teaspoon coconut extract
    • 1/4 teaspoon lemon extract
    • 1/4 teaspoon orange extract

    Garnish

    • whipped cream
    • candy corn

    Wilton Checkerboard Cake Pan

    TOOLS YOU’LL NEED

    Instructions

    Line a springform pan with parchment paper.

    Crust

    Add the crushed graham crackers, sugar, and melted butter to a mixing bowl and combine until completely mixed. Press firmly into the bottom of the springform pan.

    Candy Corn Cheesecake Filling

    Place the checkerboard form gently on top top of the graham cracker crust without pressing.

    Voilà! Easy No Bake Candy Corn Cheesecake
    Without Added Flavoring

    Empty both containers of the ready-to-eat cheesecake filling into a large mixing bowl. Using a spoon, fill the center ring with uncolored cheesecake filling. Dip a rubber spatula into warm water to level the filling.

    Add a few drops of yellow food coloring into the cheesecake filling and stir gently until completely yellow. Spoon the yellow cheesecake filling into the outer ring of the mold and level.

    Next, add a few drops of orange food coloring into the yellow cheesecake filling and gently stir until solid orange.

    Spoon the orange cheesecake filling into the center ring of the mold and level.

    Carefully remove the ring and refrigerate for 1 hour.

    Remove the Candy Corn Cheesecake from the springform pan and slice to serve.

    Tri-Color Cheese Cake Pan
    OPTIONAL Flavoring
    COCONUT CENTER

    Add one cup of ready-to-eat cheesecake filling and the 1/8 teaspoon of coconut extract into a small mixing bowl. Stir to combine. Using a spoon, fill the center ring with the coconut cheesecake filling. Dip a rubber spatula into warm water to level the filling.

    ORANGE CENTER RING

    Next, add 1 – 1/2 cups cheesecake filling, one +/- drop/s orange food coloring, and 1/8 teaspoon of orange extract into a second mixing bowl. Stir to combine. Spoon the orange cheesecake filling into the center ring of the mold and level with a spatula dipped in warm water.

    LEMON OUTER RING

    In a third mixing bowl, add the remaining cheesecake filling, one +/- drop/s of yellow food coloring, and 1/8 teaspoon of lemon extract into the cheesecake filling and stir gently until combined. Spoon the yellow cheesecake filling into the outer ring of the mold and level.

    Top with whipped cream.

    How to Create A Simply Lovely Halloween Glam Tablescape

    Don’t you just love all of the fun options for Halloween decorating? I do! Though I enjoy visiting homes who decorate with the spookiest of spooky things, I like to keep it natural and witch spooky in our home when it comes to Halloween decor. bats, spiders, cats, and witch hats are my thing.

    I am keeping it simple mixing neutrals with different textures and patterns.

    Set the Stage

    Instead of a tablecloth or a table runner, I pulled/stretched a bag of faux spider web into a long strand across the length of the table. I hooked the web around all four corners of the tabletop to keep it in place. It creates an interesting subtle texture without taking away from the simple elegance of this tablescape.

    FYI! Of course for contrast you could add a black tablecloth to offset the white webbing.

    The Centerpiece

    • I started by placing these Two’s Company Set of 6 Silver Vases filled with black root candles and moss down the center of the table avoiding a straight line.

    Silver, black, or crystal candlesticks would be pretty too! You can find the Two’s Company Set of 6 Silver Vases on eBay.

    • Go shopping in your yard for greenery. Loosely weave the branches in between the candlesticks.

    • Pick a dainty pastel flower like these Mini Dianthus for an unexpected pop of color.

    The Place Settings

    Place Mats

    I picked the up at Home Goods with a table runner to match.

    These rectangular or these round neutral with black spiders are a close match to my table. Here are similar versions in white with black spiders. Rectangular/ Round

    Clear Glass Plates

    I  picked these up at Walmart for just a few dollars. They are great for large groups.

    Sparkle Tip: When hosting 20+ for a party, it is always nice to serve horderves on a glass plate. I love to shop at Webstaurant for inexpensive entertaining goodies. Be sure to bookmark Webstaurant.

    DIY Glitter Spider Napkin Rings 

    I used these octagonal napkin rings and used a removable glue dot to add a glittery spider to each. (I pulled them off the pick.)

    Sparkle Tip: Clear napkin rings are great to have on hand for holidays and themed parties. The small themed trinkets you can glue dot on them are endless. A super inexpensive option: Use clear or white shower curtain rings!!!!

    White Cloth Napkins

    I used white waffle weave dinner napkins for this tablescape for added texture, but you can never go wrong with 100% linen hemstitch dinner napkins.

    Pull one corner of the napkin straight through the Glitter Spider Napkin Ring. Place the napkin diagonally across the plate letting one end drape off the table.

    Mini Cupcake Stands with Small White Pumpkins add an extra bit of charm to each place setting. Here is a set of solid white. The mini white pumpkins can be found at most every grocery store in the fall.

    For an added touch, use a paint pen to add names to each mini white pumpkin for a personalized place setting.

    It would be fun to place a Mini Red Hot Candied Apple, a Green Salted Caramel Apple, or a Swirly Twirly Marble Candied Green Apple on each mini stand too!

    Pull the table up into the chandelier. Add faux cobweb, glitter spiders, and a few sprigs of greenery.

    Today I am getting into the Halloween spirit with Heritage Distilling Company and sharing a Sparkling Charm novelty “Bat Shot Crazy Halloween Shot” recipe.

    Made with oh so tasty Heritage Distilling Company Coconut Vodka, partakers will go batty for this yummy Halloween cocktail shot.

    What is in A Bat Shot Crazy Halloween Shot

    A fruity cream blend of pineapple juice, coconut cream, and coconut vodka.

    When to Serve The Bat Shot Crazy Halloween Shot

    • Halloween Party

    Bat Shot Crazy Cream Shot

    Ingredients

    Edible Shot Glasses

    • 3 cups white chocolate chips +2 tablespoons
    • purple gel food coloring
    • gummy bats

    *The bats I used are made by Wilton. I picked them up at Walmart. They can be found at craft stores too.

    Mold

    *I picked this one up at WalMart. They are also sold in craft stores. 

    Shot Ingredients

    Garnish

    • whipped cream
    • straw, cut in half

    Instructions

    Edible Shot Glasses

    Fill a small saucepan with two inches of water. Place a heat safe bowl larger than the pot on top of the saucepan. Bring the water to a slow simmer over medium-low heat.

    Add the white chocolate chips and a few drops of the food coloring gel to the bowl and stir occasionally until completely melted.

    Using a spoon, carefully fill the silicone shot glass mold.

    Bat Shot Crazy Cream Shot

    Carefully bounce the mold on the counter to remove air bubbles. Using a rubber spatula dipped in warm water, level the chocolate. Place the mold in the refrigerator for 30 minutes or until the chocolate has hardened. Remove the shot glasses from the mold by pressing from the bottom of the mold. Push all the way through.

    Bat Shot Crazy Cream Shot

    Melt 2 tablespoons of white chocolate in the microwave for 10 seconds. Dab a tiny bit of the melted chocolate onto the edible cup. Press the gummy bat into the melted chocolate to adhere.

    Mixology

    Add the coconut vodka, pineapple juice,  and coconut milk into a shaker filled with ice and shake.

    Carefully pour into the edible shot glasses.

    Top with whipped cream.

    Add a straw and serve.

    Itty Bitty Red Hot Candy Apples

    Makes 10 Mini Apples

    Ingredients

    • 12 mini ROCKIT apples, washed/dried, stems removed
    • 2 cups granulated sugar
    • 1 cup light corn syrup
    • 1/2 cup hot water
    • 1/2 cup red hot cinnamon candies, (Red Hots)
    • wooden sticks

    TOOLS YOU’LL NEED

    Instructions

    Lightly spritz a sheet of parchment paper with nonstick cooking spray.

    Insert a stick into the tops of the itty bitty apples.

    Combine the water, corn syrup, and sugar in a medium saucepan over medium-high heat. Stir until the sugar dissolves.

    When the mixture reaches 250° on a candy thermometer, stir in the red hot cinnamon candies until they dissolve. Continue to cook the candy until it reaches 302° and remove from the heat immediately.

    Using the stick as a handle, quickly dip the itty bitty apples into the hot mixture and give it a twirl. Let the excess hot syrup drip back into pot and set it on the prepared parchment paper.

    Work quickly repeating with the remaining apples.

    Allow the apples to cool at room temperature.

    Sparkle Tip: Set my apples on a mini muffin paper and wrapped them for party favors. They of course would be just lovely on a pretty silver tray.

    Best enjoyed within 24 hours.

    Print the Sparkling Charm Glitter Glam Bat template. Cut out the size/s of your choice. Place a bat template cut out on the back of the black glitter cardstock and trace the bat. Cut the Glitter Glam Bat out. Repeat steps one through three. Place a single command tape on the back of the Sparkling Charm Glitter Glam Bat/s and firmly press each to the surface of your choice.
