Gougères Pâte à Choux (Easy Light and Fluffy Cheese Puffs)

Light and fluffy!

Easier than you think to make!

Crowd Pleaser!!!

Make them for dinner!

Make them for the Holidays!

Make them to take to parties!

Grab an apron! Let’s make them now! Oh! and let’s make two batches! They go FAST!

Gougères Pâte à Choux (Easy Light and Fluffy Cheese Puffs)

Ingredients

1/2 cup water
1/2 cup milk
1/2 teaspoon salt
1/2 unsalted butter cut into tiny cubes
1 cup all-purpose flour
4 eggs
1 tablespoon pepper
dash of nutmeg
1 3/4  cups Gougères cheese, shredded

Directions

1. Preheat oven to 400°F.

2. Line two baking sheets with parchment paper.

3. In a medium saucepan heat the water, milk, salt, and butter over medium heat until the mixture comes to a boil.

4. Turn the heat down to low and add the all-purpose flour.

5. Stir the flour in until it’s completely incorporated and the mixture pulls away from the sides of the saucepan and a film forms on the side of the pot.

6. Remove the mixture from the heat and let it cool for about 3 minutes in a medium mixing bowl.

7. Sprinkle on the nutmeg and pepper.

8. Add one egg to the mixture.

Okay! This is the fun part! Stir that egg in like crazy with a WOODEN SPOON! It won’t incorporate at first. Just keep going until it is blended in. Magic! The dough will look shiny.

Repeat with the last three eggs stirring in completely with each egg.

 

9. Stir in 1 1/4 cups of the cheese.

10. Using a tablespoon cookie scoop, place small rounded mounds to the prepared baking sheets two inches apart.

11. Sprinkle with the remaining cheese. I sprinkle each with a little more salt and pepper. Completely up to you.

 

 

12. Bake for 20 minutes or until they are puffed and golden.

Turn on that oven light!!!! AVOID OPENING THE DOOR UNTIL THEY ARE GOLDEN! THEY WILL DEFLATE!

13. Remove from the oven and cool completely at room temperature on a baking rack.

CONGRATULATIONS! YOU HAVE JUST MADE A FANCY FRENCH PASTRY!
