Coconut Lime Bone Broth Pho Bowl

Serves: 2

Ingredients

5 cups bone organic chicken bone broth
1/2 cup unsweetened coconut milk
1/4 cup fresh squeezed lime juice
2 thin slices fresh ginger
2 whole cloves
1 cinnamon stick
2 teaspoons pink salt
12 ounces pho rice noodles
2 cups shredded chicken
2 green onions, trimmed and thinly sliced
mint leaves
purple basil leaves
1 sliced red pepper
hot pepper oil
edible flowers, garnish
lime slices, garnish

Directions

1. Add the chicken bone broth, coconut milk, and the lime juice to a pot over low heat.

2. Wrap the ginger, cloves, and the cinnamon stick securely in cheese cloth.  Add it to the pot.

3. Adjust the heat to medium-high and cook for 15 minutes to infuse flavors.

4. Stir in the salt and turn the heat back to a low slow simmer.

5. Cook the rice noodles according to the package directions. Drain thoroughly and divide between 2 bowls.

6. Top the rice noodles with the shredded chicken and ladle the hot broth over the top.

7. Sprinkle with the green onions and drizzle with hot pepper oil.

8. Add a lime slice, the red peppers, mint leaves, and purple basil.

Optional: Garnish with edible flowers.

  1. It still baffles me how people do not know about the 2 ingredient dough recipe yet. It has been trending since the last year of 2018. People must be living under a rock if they’ve never tried it yet.
