Chocolate Chip Derby Pie
Ingredients
10 inches pie crust, thawed
1⁄2 cup unsalted butter
1⁄4 cup sugar
3⁄4 cup brown sugar, packed
3⁄4 cup light corn syrup
4 large eggs
1 1⁄2 teaspoons vanilla
3⁄4 Hershey’s chocolate chips
1 1⁄4 cups toasted pecan halves
Garnish
whipped cream, fresh
mint sprigs
Directions
Preheat oven to 350 degrees°.
Carefully place the pie crust in a pie plate. Crimp the edges with a fork. Place it back in the refrigerator to cool.
In a large mixing bowl using a hand mixer on medium, whip the butter, sugar, brown sugar, corn syrup, eggs, and vanilla until frothy. The mixture will be a lovely frothy tan color.Fold in the chocolate chips and pecans.
Pour into the prepared cold pie crust and bake for 55 to 60 minutes until set.
Remove from oven and let cool.
7. Give it a dollop of fresh whipped cream! Add a mint sprig! Serve!
