How do you like your eggs? If your answer isn’t “Cloudy with The Sun Shining” …you may change your answer after trying these.

Have you heard of cloud eggs? I had them in a restaurant in Seattle served on a piece of toast sprinkled with local Beecher’s Cheese. They were light, fluffy, and fun to eat. This is certainly a different take on how to cook an egg and is perfect for a weekend brunch.

"Cloud Eggs" Sunny Please!
“Cloud Eggs!” Sunny Please

Ingredients

nonstick cooking spray
4 large eggs
salt

Directions

1. Preheat the oven to 350 degrees F.

2. Line a baking sheet with parchment paper and coat with nonstick cooking spray.

3. Coat 4 small glass bowls with nonstick cooking spray.

4. Crack the eggs and separate them by putting the whites into a medium bowl and the yolks into each of the 4 small bowls. One yolk per bowl. 

5. Add a generous pinch of salt to the egg whites and beat with an electric mixer on low speed until stiff peaks form, 2 to 3 minutes.

6. Spoon 4 large dollops of the egg whites onto the prepared baking sheet and make a small well in the middle of each with the back of a spoon.

7. Bake the whites until they are just firm.

8. Gently pour 1 yolk into the well of each white and bake until the yolk sets and deepens in color like the sun.

10. Season with salt and pepper.
